East meets West/ 緑茶、和菓子、そしてクロテッド・クリーム

Someone I met in Japan during the event in May sent me a lovely gift the other day - a "starter kit" for making matcha (powdered green tea).  
Normally, matcha is served at Japanese tea ceremonies.  And, in order to "perform" the ceremony, you will need to take lessons to understand all the rules.  I have always wanted to take tea ceremony lessons, but unfortunately I haven't managed it yet.
However, well - you can still make matcha green tea, without the ceremony...

So, this is my first ever matcha that I made myself.  It is correct that it is slightly foamy.  I love the colour - such lovely green!


She sent me not only the starter kit, but also a book about tea ceremony, some matcha tea, and Japanese sweets, monaka.  Monaka consists of two wafer-like crispy "shells" and red bean curd centre.  It goes very well with green tea.


In the letter she wrote that I should try the sweet with clotted cream, as it is a "tested and loved" recipe.  Of course, it is very unusual combination, but I trusted her, and tried it, as recommended.


.. and.. it was not bad at all!  Somehow, it had a nostalgic flavour, though it was the first time I ate monaka with clotted cream.  It went very well with my matcha tea.
I am very grateful for my new friend - and I hope I see her soon again, perhaps in London next time!

5月の日本でのイベントで知り合いになった方が、先日素敵な贈り物をしてくださいました。初心者向け、抹茶セットです。
茶道を習わなくても、お茶席でなくても抹茶を点てていいのね…と、なんだか目から鱗、という気分でした。
というわけで、ロンドンの硬水をフィルタリングして、シャカシャカと見よう見まねで茶筅を使い、抹茶を点ててみました。

とりあえず、色は綺麗です…味は、プロの方からすると、分かりませんが…


この方は、お茶セットのみならず、茶道についてのデザインの本、抹茶を数種類、それに最中を一緒に送ってくださいました。「手作り最中」という、皮と中身が別々になったものです。

同封してあったお手紙に「最中とクロテッド・クリームって合うんです!ぜひ試してください」とあったので、少々不安を感じつつも…おすすめのとおりにして、頂きました。


意外ですが、たしかに!
なかなかおいしい組み合わせです。
こちらの最中はたねやのものだったのですが、餡の中に、求肥が入っています。求肥+あんこ+クロテッド・クリームの取り合わせが、なんだか懐かしい…と思ったら、頭の中で「白玉クリームあんみつ」に変換されていたみたいです。そこに、最中の皮の香ばしさ。
おいしくないはずがありません。

あずきのふくよかな甘み、クロテッド・クリームの濃厚さに、抹茶の爽やかな苦みがぴったりで、おいしいお茶のひとときでした。

そのうち、ちゃんと軟水を用意してお茶を点てないといけませんね…。

故郷の味 Part2/ Taste of Home Part 2

日本に帰ってくるとどうしても食べたくなるのは、やっぱりおいしいお寿司です。築地に行って、頂いてきました。

私は安上がりな女で…、光モノが大好きです。
こちらは大衆魚の王様、イワシ。安くておいしいなんて、素晴らしい。
しかし、イワシのお寿司の写真を真剣に撮る客も珍しかったのでは…。


この季節に日本に戻ってきたのは何年ぶりか…思い出せません。ということで、思い出せないくらい久しぶりの、旬のカツオもおいしく頂きました。
赤身のきれいなこと。
こちらは軍艦のトリオです。

頭がついた魚って、西洋人は大抵嫌がるようです。普通の焼き魚でも、頭があると嫌がるくらいですから、そのまま丸ごと食べる白魚などは、かなり恐怖?なのではないでしょうか。
よく、「目が見てる~食べられない」とか言います。
しかし、これが日本のカルチャー。というわけで、白魚のアップ写真です。

おいしいんですけどねぇ。

今回も思いましたが、お寿司ってとってもきれい。もっと美しく撮れたらよかったのですけど。
あるとき、このお寿司屋さんで、お刺身の盛り合わせに見とれてしまい、板前さんに「お刺身、本当にきれいですねぇ」と言うと、「いやあ、お客さんほどじゃないですよ」と…。

あの…刺身と比べられても…

今回の板前さんも、おおらかで愉快なお兄さんでした。また帰国の際には、ごちそうになりに行きます。

One of the many things I look forward to eating when I come back home is GOOD SUSHI.  So we went to Tsukiji, where the famous fish market is.  There are lots of nice sushi restaurants around there.

In Japan, "fatty fish" are called "glittering fish" (hikari-mono which sounds nicer in my view) - and I love them.  They are inexpensive and yummy and nutritious, what more can you ask for?
Below is the photo of sardine (iwashi) - topped with grated ginger and sliced spring onion.


It was the season for bonito (katsuo), so we ordered some.  I couldn't even remember when was the last time I was in Japan at this season.  It tasted goooood.


Here is a trio of Gunkan (the sushi wrapped in nori and made in to a oval-cylinder shape).  Small white fish (shira-uo), sea urchin (uni), and salmon roe (ikura).


Based on my own observation, (a lot of) Western people dislike having fish with its head on.  Even when it is a large fish which you eat with knife and fork, they prefer the fish to be filleted.  If they have to eat whole fish with heads..  some might freak out.  "God, they have eyes!  They are looking at me!!!"..
Oh well, but us Japanese people, we eat them.  It's our culture, and I'm proud of it..

Trust me, it's good.

I always think that sushi is beautiful.  The colours of fish flesh are just amazing.  I wish the photos came out better.
A few years ago when I was at this sushi restaurant, I was talking with one of the sushi masters and said, "Your plate of sashimi is so beautiful!".

He said,  "Not as much as you, madam"

..I wasn't quite sure if I should be flattered, to be told I was more beautiful than fish??

This sushi chef was not the same person, but was also a very cheerful and nice man.  I'm already looking forward to going back for more sushi..!

Taste of home - part 1/ 故郷の味 Part1


I haven't updated my blog for a long time..  and it is because I was back in Japan for an event that I was involved in.  The month of May just flew away, without me noticing at all...!
My stay was rushed, as always.  I had some work to do, but of course I took advantage of the occasion and indulged myself with delicious food :)  Of course my mother spoiled me with her home-cooked food (had lovely meal with lots of bamboo shoots - very seasonal).  Other than that, during the first few days I was stuffed with Japanese sweets.  Here are just a few of them..

The pictures to the left are Dorayaki.  "Dora" means gong, and normally a dorayaki consists of two round sponges with sweet azuki (or aduki- but azuki is closer to Japanese pronunciation) bean paste sandwiched in-between.  However, this one had a twist, as instead of sandwiching two rounds, it was one folded in half.  The sponge had a distinctive brown sugar flavour which was very pleasant, and the azuki was excellent.  It was a sweet present from one of my very good friends.  I also love the packaging - very neat.




Later when the pastry chef who was involved in the event arrived from London, I recommended him to taste this dorayaki - he loved it!


This is another Japanese sweet called Uiro.  Apparently more than one region claim that this is a special delicacy of the city, but this one comes from Tokushima prefecture.  It was a gift from my father's friend.  Again, I love the presentation.  So delicate and beautiful.  There were two flavours: azuki and green tea, and the flavour was so subtle.  I think uiro is something that you enjoy for the texture and the feeling of its smoothness, more than its flavour.  I enjoyed the cool, smooth mouth feel very much, which left a light aroma of the beans or the tea.

Seeing these photos again make my mouth water - but seeing the photo of my little niece makes my heart melt...  This is my cute little niece, just turned 10 months.  I was very happy that I could spend some time with her, although I am sure she won't remember me when I see her next time.. :(
Well, I just have to see her more often!!

ずいぶん長いこと、ブログの更新をしていませんでした...。それというのも、とあるイベントに関わって日本に戻っていたためです。そのうち、気づいたら5月も終わっていました…。
日付は無視して、5月を振り返った、6月の更新です(笑)

いつもながら忙しい滞在でしたが、せっかくなので、いろいろと日本ならではのおいしいものを頂いてきました。
母の手料理もとても嬉しくて美味しかったし、イギリスでは食べられない産直の筍も最高でした。山菜、アサリのお味噌汁、たらこ…みんな、とっても美味しかった。
イギリスを発つ前、「帰ったら美味しい和菓子が食べたーい!」と念じていたためか、今回はずいぶんいろいろと和菓子を頂きました。その一部です。

こちらは、黒船というお店のどら焼きです。パッケージもお洒落。普通のどら焼きのような円形ではなく、二つ折りにした三日月のような形で、黒糖のコクが美味しい、ふわっとしたカステラ生地でした。皮もさることながら、中のつぶ餡がまた美味しかった。K子ちゃん、ごちそうさまでした。






このあと、イベントのためにロンドンから来日したパティシエにも、このどら焼きをおすすめしました。彼も「おいしい!」ととても気に入ってました(ここのカステラも)。




こちらはういろう。徳島県のものです。
私はういろうというと名古屋、という印象が強かったのですが、結構あちこちの名産なのだそうです。
つるりとして、もっちりとして、さっぱりとして…。英語ではなかなか表現しがたいですね。美味しくいただきました。濃い目にいれた緑茶によく合います。
こうしてまた写真を見るだけで、ほのかな和菓子の美味しさがよみがえるようです。
(このほか、豆大福、かりんとう、柏餅、みたらし団子、ほうば餅、カステラなども頂きました♪)

そして、和菓子以上に愛しいのが、この姪っ子です。
(比べるな!と姉に叱られそうですが…)


ちょうど10カ月。可愛いさかりです。もうすっかり、叔母バカ。何枚写真を撮ったことでしょう…次に会うときには、きっと覚えていないだろうな。また行かないと。
