Claire Clarke's Afternoon Tea/ クレア・クラークのアフタヌーン・ティー

I went for an afternoon tea with Momo, to 5th Floor at Harvey Nichols.  It was a special afternoon tea, produced by Claire Clark, a very well-known pastry chef who worked in various restaurants including a three Michelin starred restaurant.
Momo and I haven't had afternoon tea together for some time - and since this was a limited edition, I think it was totally justified that I went, even though this was the third afternoon tea I had in a month.

I have only been to 5th Floor for coffee, but know that it has a good reputation for food.  I like the contemporary, clean atmosphere.










The afternoon tea was - fun and quirky.
First, four sandwiches were brought to us, sitting on a bright red acrylic board (not sure what else I can call it).


They are inspired by four cities, apparently - Paris, London, New York and Milan.
My favourite was the Milanese sandwich, which was tuna on focaccia.

Then came the scones, and the pastries.




Normally for an afternoon tea, you will be served 5-6 pastries to share between two people.  Here we had as many as TEN pastries per person!  It must be such hard work in the kitchen, and of course, we both got really stuffed.
According to the menu, they were all inspired by childhood memories- thus having flavours like bubble gum (top left, "bubble gum marshmallow pavlova") and s'mores (top middle, "peanut butter S'Mores").

I think I am a bit conservative when it comes to desserts and pastries. So the ones I liked were lemon Madeira cake, and Opera with sesame...


Now that afternoon tea is becoming more and more popular, and the competition ever more severe, each place has to do something different to stand out from the crowd.  I do love classics, but this was really fun, and very different!

今日は友人のMomo と、デパートのハーヴェイ・ニコルズにある5th Floor というレストランでアフタヌーン・ティーを頂いてきました。

期間限定のアフタヌーン・ティーで、3つ星レストランでも働いたことのある、クレア・クラークというパティシエプロデュースのものです。思い起こせば、過去ひと月の間で3度目のアフタヌーン・ティーですが...ま、いっか。

5th Floor は、料理に定評がありますが、私はお茶を飲みに来たことがあるだけです。
デパートの中とは思えない開放的な空間で、モダンな雰囲気のレストランです。











さて、アフタヌーン・ティー。
遊び心いっぱいで、楽しいお茶でした。
まず最初に登場したのは、4つの都市からインスピレーションを得たというサンドイッチです。なぜか、真っ赤なアクリル板に乗って出てきました(目がチカチカする)。


4都市とは、パリ、ロンドン、ニューヨークとミラノ。
私が一番好きだったのは、フォカッチャとツナのもの。ミラノだそうです。

それから、スコーン(フルーツとプレーン)とお菓子が登場しました。



通常のアフタヌーン・ティーでは、2人前で約5,6個のお菓子が運ばれることが多いようです。こちらでは、なんと10種類!こんなに何種類も作るのは、きっと大変だろうなぁと思いました。
私たちはというと、当然お腹いっぱい。
メニューによれば、これらのお菓子は「子供時代の思い出の味」の再現なのだそうです。
例えば、左上にあるのは「風船ガム味のマシュマロ・パヴロヴァ」で、その右となりのものは、「ピーナッツバターのS'More(たき火でマシュマロを焼いて溶かし、ビスケットに挟んだもの。キャンプファイヤーなどのときの定番らしい)」。
ちょっと日本人の感覚からすると「?」な味ではありました...。

お茶と一緒に頂くお菓子となると、私は保守的なのかもしれません。
私がおいしい!と思ったのはメレンゲののったレモン・マデイラ・ケーキと、ゴマを散らしたオペラでした。




ロンドンでのアフタヌーン・ティーの人気は、現在も高まる一方のようです。
当然、競争も激しくなりますし、どこでもほかの店との差異化を図っているのでしょう。そうした観点から見ると、たしかにこちらのアフタヌーン・ティーはユニークで、面白いものでした。
でも、個人的には、やっぱり(良い意味で)「普通においしい」アフタヌーン・ティーがいいなぁ...などと思いながら、お店をあとにしたのでした。

Trip to Mont St=Michel and St Malo part 2/ モン・サン‐ミシェルとサン・マロの旅 Part 2

After saying Good-bye to Mont St-Michel, we crossed over to the nearest town to stop for lunch, and had a  galette complète.  Galette is a crêpe made with buckwheat flour, and Complète is a galette that comes with ham, cheese and a soft sunny-side up egg.
I was too hungry, and the galette was sooo good.

I only realised that I forgot to take a picture after I had cleaned the plate...
After this satisfying lunch, we walked over to the boulangerie next door, and asked for kouign-amann.  

This regional speciality (weirdly) became massively popular in Japan, back in the 90's.  Seems there are many variations (large, small, folded, layered, rolled..), but here is the one we bought.


I think this was one of the best patisseries I have ever tasted!!
It's like the best-ever palmier + top croissant divided by two.
You get the crunch and sweetness of the caramelised sugar, the flakiness of the puff pastry, and buttery soft layers of a viennoiserie.
The lovely lady at the shop warmed it up just slightly, and I am sure that brought out the flavour too.

We also bought a slice of far breton, which is another regional speciality.  They say this might be the oldest form of a flan, and is made with egg, milk and sugar, with soft, melting prunes.  This was good too.  I think we were extremely lucky to have found this patisserie.








After a wonderful lunch & dessert, we carried on our journey and arrived at St Malo, a charming seaside town.


I am so not a beach person, but I do love the coast.  The sky was blue, and the breeze felt so goooood...


We dined at Delaunay that night, which was a big disappointment.
My main course, ravioli of lobster came with NO SEASONING.
When it was sent back to the kitchen, and returned on our table - it was THE same ravioli.  By then, the pasta was almost dissolved in the now over-salty cream.
I normally avoid writing negative comment on this blog, so you can imagine how bad the experience was.

I think we simply used up all our luck for the good weather and the fantastic Kouign Amann.

Next morning, we had a short stroll by the seaside, and then picked up our breakfast - what else, but a few more kouign amann?


Unfortunately, these were not as good as the previous day's.

We had to leave St Malo before noon, as the journey back to Paris was quite long.  We made two hasty stops on our way back, and got back to Paris just in time.  Our 30min dinner (!!  bravo for the quick service) was taken in quite a rush, and then we jumped on our Eurostar back to London.  We slept all through the journey..

Overall, it was a great trip - and I am dreaming of doing it all over again!!!

モン・サン-ミシェルをあとにした私たちは、とりあえず一番近くの町ででお昼にすることにしました。
入ったのはクレープ屋さんです。定番である、ガレット・コンプレットを頼むことにしました。
ガレットというのは、そば粉のクレープで、フランスでは甘くない「ゴハン」クレープは、大抵このそば粉のものです。コンプレットは、ハム、チーズと半熟目玉焼きがのったもの。

とーってもおいしくて、お腹が空いてて、...きれいに平らげたあとで、写真を撮り忘れたことに気づきました...惜しいことをした。
お昼を食べ終わってから、隣のパン屋さんに行きました。

皆さん、90年代に日本で大ブームを巻き起こした、「クイニー・アマン」というお菓子をご記憶でしょうか?(実際にはクィニャマンに近い発音ですが)
クイニー・アマンは、ブルターニュの地方銘菓で、今回の旅の目的の一つでした。

現地では、いろんな大きさや形のものがあるようでしたが、私たちが、今回立ち寄ったところで買ったのはこんなの↑ 手のひらサイズでした。

おいしーい!!!


今までに食べたお菓子の中で、かなり上位のランキングです。
おいしいパルミエと、おいしいクロワッサンを足して二で割ったみたい。
カリカリキャラメル+さっくりの皮、しっとりとした層にバターの香り。最高でした。体重と肌荒れを気にしないでいいのなら、毎日食べたい。ものすごく私好みです。
シンプルだからこそ、飽きがこない味です。
お店で、「今食べるの?じゃ、ちょっとあっためるわね」と、素敵なマダムがちょっとだけ「チン」してくれたのですが、これがまた良かった気がします。


こちらのお店でもう一つ買ったのが、ファー・ブルトンというお菓子です。
フランの原型とも言われており、牛乳と卵をたっぷり使った、優しい味のお菓子です。プルーンを使うのが特徴。
こちらもおいしかった。
こんなおいしいお菓子屋さんを発見出来て、本当にラッキーでした^^





満腹&満足のお昼とおやつのあと、サン・マロに向かいました。
サン・マロは、海辺にある、城壁で囲まれた小さな町です。


ビーチリゾート、というようなものには惹かれないのですが、海辺に行くのは大好きです。
空が広くて、風がとても気持ち良かった!ほんとに、天気には恵まれていたと思います。


その晩の夕食は、Delaunay というレストランでした。
私のメインはロブスターのラヴィオリだったのですが、なんと、塩味がしない...
キッチンに戻してもらったのですが、同じラヴィオリが、今度はおそろしく塩辛いソースに浸って戻ってきました。
もうラヴィオリどろどろ、ロブスターも火が通りすぎて固い。これはひどすぎますよね。
通常、このブログでは悪い批評というのは避けているのですが、これは書かずにいられない、という気になりました。皆さん、行かないように!

今回の旅行ではきっと、天気とクイニー・アマンで、幸運を使い果たしてしまったのでしょう...。

翌朝は、散歩のあとで朝食をとりました。
当然(!) クイニー・アマンです ^^


うーん...昨日のクイニー・アマンのほうが、断然おいしかったなぁ...

パリに向かう道のりはかなり長かったので、昼前にはサン・マロを発ちました。後ろ髪を引かれる思いでしたが...。
途中お昼などで寄り道をしつつパリに到着したのは、レンタカーを返す予定時間ぎりぎり。
その後、大急ぎで駅近くのブラッセリーにて30分で夕飯をかきこみ(スピーディーに対応してくれたウェイターさん達に感謝!)、ユーロスターに乗って、ロンドンに戻りました。

帰りの列車ではさすがに疲れて、二人ともずーっと眠ってしまいました。
でも、ほんとに充実した、楽しい週末旅行でした。
また行きたい!!

Trip to Mont St=Michel and St Malo part 1/ モン・サン‐ミシェルとサン・マロの旅 Part 1

Oh god.. by the time I am updating this, it is already several weeks ago that we took a long-weekend trip to Mont St-Michel and St Malo.

We took the Eurostar to Paris, then rented a car and drove up to Mt St-Mich, via Rouen.


Rouen is a charming town in the Normandy region, famous for its Cathedral.  It is the one that Monet painted at various time of the day.  After a hasty baguette-sandwich lunch, we made a quick tour of the cathedral.



Then, we headed for Mt St-Mich...

I went to Mt St-Mich once, way back in 2001, and totally fell in love with the place.
I always wanted to go back, and here I was finally back, after nine years.  I was already excited to see the characteristic silhouette far ahead!


When we arrived, we just walked around the Island (if I may call it so) until dark, then had a light dinner with a glass of cidre (although they have had a dispute for centuries, Mt St Mich is in Normandie - the apple region, and not Bretagne), and walked back to our hotel, which we booked months ago, so that we could lodge inside the walls.


We were very lucky with the weather.
Next morning was a bit chilly but crisp and clear.  The Abbey under a bright blue sky - it couldn't be better.


Inside the abbey was very busy with many tourists from all over the world.  I wish we could come during the weekdays..
The structure of the abbey is amazing, and you will understand why it is called "Merveille", when you see what  technique and knowledge and skills were applied to build this magnificent building.
My favourite part was the cloister- I love Romanesque cloisters.






In the early afternoon, we left Mt St-Mich.
This time, just like last time, I was thinking - When will I come back here next time?
What happens twice, happens thrice...

これを書いている時点では、すでに数週間前のことになってしまいましたが…9月の半ばの週末、モン・サン‐ミシェルとサン・マロに行ってきました。

まずは、ロンドンからユーロスターに乗り、パリに到着。そこからレンタカーして、ルーアンという街を経由してモンサンに向かいました。


上の写真がルーアンの街並みです。私は過去に2度ほど来ているのですが、なんだか居心地の良い街です。
ここには、モネが何点も異なる時間に描いたことで有名なルーアン大聖堂があります。お昼のあと、行ってきました。



そして、一路モンサンをめざします。

モン・サン‐ミシェルには、2001年に一度姉と行ったことがあるのですが、そのときにとっても気に入って、ずっとまた行きたい、と願い続けてきたのでした。
9年ぶりにようやく来られることになり、遠くあの特徴的なシルエットが見えただけで、もう興奮状態でした。
(ちなみにこの土地の羊はソルト・マーシュ・ラムと呼ばれ、塩を含む草を食んで育つため、塩を加えなくても肉に塩味があることで知られています)


宿は島内に取ってあったので、ひとまず荷物を下ろし、それから暗くなるまで、島中を歩き回りました。どこを切り取っても、絵になりそうな風景でした。
軽めの夕飯をシードルとともに摂ってから、宿に戻りました。
朝、6時過ぎに家を出てから、長い一日でした。


次の朝は快晴。
天気には非常に恵まれていたと思います。
青空に映えるモン・サン‐ミシェルは本当に素晴らしい眺めでした。
(搭の先端に雲がかかっていました!)


この修道院は、改築や増築を繰り返してきたのですが、各時代ごとに、さまざまな技術や知識を盛り込んで築き上げてきたものです。
それらを眺めるのはとても興味深く、昔の人たちの熟練の業は素晴らしかった...と感嘆するのみでした。






私はロマネスク様式のの廻廊が好きなので、ここの廻廊ではずいぶんたくさん写真を撮りました。




昼過ぎまでたっぷりと時間をかけて修道院内を見て、早めの午後にモンサンをあとにしました。
駐車場で未練たっぷりに修道院を振り返りながら、次に来るのはいつだろう...と、9年前と同じことを考えていました。
二度あることは三度ある、と言いますから。
いつかまたきっと。

Baking with cob nuts/ コブナッツでケーキ作り

I have seen cob nuts many times - in fact, every autumn, without knowing what exactly they were.  I found out the other day, that they are basically young hazelnuts.


So, I bought some.  Once you peel off the leafy bits, the shell comes out.

The shells were quite hard, and I didn't have a nut cracker.  I wondered how I should crack them open (I thought about cracking them with my teeth, but my husband was horrified thinking I would break a tooth, so I had to give up the idea), and concluded that I just had to use whatever tool I had..

... a hammer.

Our kitchen is an open-plan kitchen, directly connected with the dining/living room.
The bits of the shells flew everywhere...

After much hard work that made me feel like I was doing some DIY stuff, I got a handful of fresh cob nuts.  I followed the instruction given by my patissier friend: roughly chopped them up, and roasted at 140c for 10-15min.
Now they tasted slightly sweet, and I actually liked them much more than hazelnuts.
Since hazelnuts go well with chocolate, I decided to bake some chocolate cake with these, taking a recipe from Gérard Mulot's recipe book.

I was pleased with the result - a rich, moist chocolate cake with chunks of nuts.
It was the first time I tried the recipe, and I liked it very much.
However- I am not sure if I want to use cob nuts again.
It was quite tiresome going around my flat picking up the cob nut shells from under the sofa.
I think when I try the recipe again, I'll go plain or use other nuts.

「コブナッツ」というものを、今までに何度も目にはしていました。
毎年、秋になると出回り、何だろう...と思いつつ、手を出さずにいたのですが、先日それが若いヘーゼルナッツ(とほぼ同様のもの)だと知り、買ってみました。
こんな感じのものです。


こちらは周りの葉っぱ?らしき部分を剥いたところ → 

ドングリみたいな形です(ヘーゼルナッツはもっと丸いけれど、コブナッツはちょっと長めの形をしている)。
殻はかなり固めで、どうしようか悩んだのですが(歯で割ろうとしたら、夫にひきつった顔で止められたので断念しました)、手持ちのもので何とかするしかない、と判断しました。

で、...トンカチの登場です。


我が家のキッチンはいわゆるオープン・キッチンというもので、リビングの一画を占めています。トンカチでコブナッツの殻を割ったら、テレビのある場所や、テーブルの端まで殻のかけらが飛びました...。

なんだか大工仕事をやり終えたあとのような達成感を感じつつ、殻の処理を終えたら、手のひらいっぱいくらいのコブナッツになりました。
そのまま食べてみたら、生のマメの味がしました(笑)
そこで、パティシエの友人のアドバイスに従い、粗く刻んで、140度のオーブンで10-15分ほどローストしてみました。
すると、ほんのりと甘みが加わり、軽めのナッツの歯触りです。普通のヘーゼルナッツより美味しい。

このナッツを使って、チョコレートケーキを焼くことにしました。
レシピは、ジェラール・ミュロからです。


しっとりとした食感のリッチなチョコレートケーキです。初めて作ったのですが、なかなかおいしい。

が...また次回も、コブナッツとともに焼きたいか、というと、ちょっと疑問です。
ソファの下から、コブナッツの殻を掃き出す掃除、結構大変だったものですから。
美味しいけど、労働力も要求されるお菓子作りでした。
