コンノート・ホテルでアフタヌーン・ティー/ Afternoon tea at The Connaught

今日はコンノートというホテルで、"Chic & Shock Afternoon tea" と名付けられたアフタヌーン・ティーを頂いてきました。
前からずっと行ってみたかった場所で、とても評判が良いので楽しみにしていました。


連休の中日で、こんでいるかと思ったのですが、それほどでもなくてゆっくりできました。スペースはそう広くないのですが、大きな窓から入る光で、解放感のある空間です。

紅茶はウェッジウッドの茶器でサーブされます。
個人的に少し残念だったのは、フレーバード・ティーや中国茶が多かったこと。シンプルなイングリッシュ・ティーに相当するのは私のオーダーしたセイロンだけでした。
アッサムやウバなど、ミルクを入れて美味しい紅茶があると嬉しかったのですが。



まず登場するのがサンドイッチです。
ここで食べすぎちゃいけない...と思いつつ、おいしくて、つい完食してしまいました。
手前左から、青リンゴとチキン、タマゴマヨ、キュウリとディル、サーモンとワサビクリームです。


こちらがスコーン。
アプリコット入りとプレーンの二種。バター多めの生地で、わりとさっくりとしていました。


ここでは、クリスティーヌ・フェルベールのジャムが4種類出され、季節ごとに入れ替えられるのだとか。今回はバラのジェリー、マンゴー&パッションフルーツ&オレンジ、ルバーブと野イチゴ、それにラズベリーとスミレの4種でした。
イチゴは王道だけれど、酸味の強いジャムを合わせるのが個人的に好きなので、パッションフルーツのジャムがとても気に入りました。オレンジの果肉がごろごろしているのも◎。家でも真似して作ってみたくなりました。


さらに、きれいなお菓子の数々が、三段トレイで登場します。


まず、一番下の段。
ブルーベリーのケーキ、ピスタチオとラズベリーのタルト、チョコレートとキャラメルのムースです。
このムース、運んできてくれたウェイターのお兄さんが「これが僕の一番のお気に入りです」と言っていたけれど、私も同意見です。
キャラメルの塩加減が絶妙で、ほろ苦いチョコレートとよく合っていました。
真ん中の段(ここにスコーンが乗ってくるところが多いのですが)は、ピーチコンポートのシャルロット、フィナンシエ+アプリコットのムース、ケシの花とイチゴのシューでした。
どれも丸く、ころんとしているのも、きっと意図的なのでしょう。


一番上の段には、クロテッド・クリームと、ババ(ラムをしみ込ませたブリオシュ生地のデザート)がのってきました。
こちらのババは、パン生地をオレンジとパッションフルーツのゼリーに閉じ込めて、上にミルクのフォームをのせたもの。
なかなか凝った出来でしたが、フォームが溶けていたのがちょっと残念です。




こちらのアフタヌーン・ティーは、エレン・ダローズというフランス人の女性シェフが手掛けたものです。紅茶の選択も、お菓子もジャムも、「フランスらしさ」の色濃い点がユニークだと思いました。
別のホテルでももちろん、フランス人のヘッド・パティシエが手掛けたところはいくつもありますが、ここまで「フランス」を全面に打ち出しているところはないでしょう。
タイトル通り、お洒落なお茶でした。

Today we went to The Connaught Hotel and had "Chic & Shock Afternoon tea".  I have always wanted to try their tea, and was looking forward to the occasion.


The tea room is not very large, however thanks to the large window it had plenty of light and felt airy.
Despite the fact that it was a Bank Holiday weekend, the place wasn't too busy - we could enjoy our tea in peace.

The tea was served in this sophisticated Wedgwood cup.  
One negative point (at least for me) was that there wasn't a lot of traditional English tea - most of the tea on the menu was flavoured tea or Chinese tea.  I ordered Ceylon, which was the only choice I had..



Here are their sandwiches- salmon, egg, cucumber and chicken.  They were all good, but I especially liked the salmon and wasabi cream sandwich!


Next - scones.  They make plain and apricot scones.  They were light and buttery, and went well with fruity jam and smooth clotted cream.


The scones were served with four different jams from Christine Ferber, who is known as "the fairy of jam-making" in France.  The selection changes regularly, and this time we had rose petal jelly; mango, passion fruit and orange jam; rhubarb and wild strawberry; and raspberry with violet.  
My favourite was the passion fruit one, which had the fresh tang of the fruits.


.. And the pastries on a three-tiered stand.


I liked the caramel mousse the best.  It was layered with hazelnut daquoise and dark ganache, finished with beautiful glaçage.
It was light, and not over-sweet .. just the perfect balance.  Yum.
This is the middle plate- which was very pretty.  I suppose it was intentional that they are all round-shaped.


This one is a creative version of baba - brioche soaked in rum syrup encased in passion fruit and orange jelly, topped with milk foam (shame that the foam already dissolved by the time I took the photo).
The chef behind this creative afternoon tea is Hélene Darroze, a well-known French female chef.  In fact it was very French, from the selection of tea to jam, and of course the pastries.  
I know there are other London hotels that have French head pastry chefs, but so far I think this is the place that feels most French - which is interesting, as afternoon tea is such an "English" tradition.
As the name says, it was a very chic tea for sure!

The end of summer, beginning of autumn/夏の終わり、秋の始まり


I have kept on buying peaches and strawberries, telling myself that these are the last of this season - since end of July...  Well, finally I did stop buying them, and over the weekend, I bought my last nectarines of the season.
When I buy the "last batch", I often make them into a jam- so that  I can still enjoy the season's flavour, even when the actual fruits are gone from the shelves.  So I made some nectarine conserve this time.


Following my jam recipe book, Jams & Chutneys, I chopped up the nectarines and covered them with sugar over-night.  This way, the fruit gets "cooked" in sugar, and you don't need to cook in heat for a very long time.
I love the refreshing smell of this conserve - it really is like capturing the last bit of summer in a jar.  And the colour is beautiful too.  It reminded me of rose petal jam.

Having said my good-byes to nectarines and peaches, I welcomed greengages and English plums.


I think greengages are my favourite plums.  It is unbelievably green, but so sweet.  I fell in love with this fruit when I was living in Paris.  I must have seen them in the UK too, but they never seem to have caught my attention.  In France, it is called Reine Claude - Queen Claude, which is apparently the name of a Duchess of Brittany from the 16th century (wiki).

These plums make lovely jam too!
I already know that there will be some jars of English plum jam and greengage jam in our cupboard, by the time I start wearing my warm long boots...

この季節、これが最後...と思いつつ、何度イチゴと桃を買ったことでしょう。7月の末から、もう旬も終わりだと思いながらも、つい何度も手に取ってしまっていました。
ネクタリンも同じだったのですが、とうとう「ほんとに最後のネクタリン」を先日買いました。
季節最後の果物は、ジャムにしたくなります。
季節が過ぎても、まだその果物を楽しめるからです。
ということで、今回はネクタリンでコンサーブを作りました。



私の持っている Jams & Chutneys という本にしたがって作ったのですが、まず、1cm角に刻んだネクタリンを、砂糖漬けにして一晩置きます。
こうすることで、調理されたのと同じ効果が得られ、実際に火を通す時間を短縮できるのだそうです。実際、作ったコンサーブは、ほんとにフレッシュな香りと味でした。

写真だとちょっとわかりづらいのですが、皮ごと煮たので、ピンクがかった色合いになりました。バラのジャムみたいで綺麗でした。

(註:Conserve は辞書によれば「砂糖や塩漬けなどにして保存できるようにした食品」です。私のレシピ本では、いわゆる「ジャム」 と、砂糖を控え目にした「プリザーブ」と、最初に砂糖漬けにする「コンサーブ」とで、名称を分けているようです)

ネクタリンや桃の季節は終わってしまったけれど、それと同時に、今度は英国産のプラムや、グリーンゲージの季節がやってきました。


グリーンゲージは、写真の緑のプラムです。緑だけれど、これで十分熟しており、とても甘くておいしいプラムです。
初めて食べて感動したのは、パリに住んでいたときのことでした。彼の地では、レーヌ・クロード(クロード王妃)と呼ばれており、話によれば16世紀のブルターニュ公爵夫人の名前からつけられたのだそうです(ウィキより)。

言うまでもなく、これらのプラムで作ったジャムもまた、おいしいのです...

そろそろロングブーツで暖かい格好をして出かけなきゃ、と言い出す頃には、きっと私の戸棚にはまた新たにプラムのジャムが加わっていることでしょう。

Baking experiment- ground cashew nuts/実験・カシューナッツ・プードル

I have been pretty busy lately, and haven't found much time for baking.
When I finally found some time, I wanted to try something new...  and I came up with the idea of making apricot cake using ground cashew nuts, instead of ground almond.


I've always liked almond, and never missed it from my cupboard.  Sometimes I have whole almond, sliced almond, ground almond and salted roasted almond... and occasionally, almond butter too.
Cashew nuts are rather a new regular in my cupboard; I started stocking them when I began making my own granola.  I am fond of its the sweet flavour and buttery crunch, and wondered how it would come out if I baked it in a cake.  Would it be any different from using almond?


The result - almond works better....
I think there is a reason why ground almond is widely available, while ground cashew isn't.
It was not bad at all, and it did have the nice sweet flavour, which is characteristic of cashew nuts.  I think it made the cake more moist than almond does.
But... simply, I preferred the same recipe with almond, as it gives a finer texture and more subtle flavour that seems to marry better with other ingredients.

Oh well, I think the experiment itself was the most fun bit, and I think I cared less about the outcome anyway.  I am still happy that I tried it, and I think I did learn something.

このところ忙しくしていて、なかなかお菓子を作る時間も見つけられませんでした。
ようやく時間が取れて、何を作ろうかと考えたとき、むくむくと何か新しいことをしたい!という考えが頭をもたげてきました。
ということで、アーモンド・プードルの代わりに、カシューナッツを粉状にしてみたらどうなるか、実験することにしました。


私はナッツ類の中ではアーモンドが好きで、いつも戸棚にはホールアーモンド、スライスアーモンド、アーモンド・プードル、ローストした塩味アーモンドが入ってます。ときどき、アーモンド・バターも(ピーナッツバターのアーモンド版)。
カシューナッツは、自家製グラノーラを作るようになってから、常備するようになりました。キャラメリゼされた香ばしいカシューナッツは、グラノーラには欠かせません。甘みのある香り、軽い歯ざわりに、今更ながらおいしいナッツじゃない、と開眼した思いでした。
そこで、それをアーモンドの代わりに使ったらどうなるか?と思ったわけです。


結果 ― ...アーモンドのほうがやっぱりおいしい。

世の中に粉状のアーモンドが普通に流通していて、カシューナッツが流通していないのには、やはりわけがあるのですね。
決してまずかったわけじゃありません。カシューナッツ独特の香りがして、アーモンドよりもしっとりとした焼きあがりでした。
でも、かえってそれらが、ほかの原料の持ち味の邪魔をしてしまうように感じたのです。アーモンドはつくづく名脇役だと思いました。

ま、いずれにせよ、こういうのは過程が楽しいのだと思います。うまくできたらもうけもの、くらいのつもりでした。
また何か実験しようっと。

Lake District part 2/ 湖水地方へ(後編)


During our trip in the Lake District, we were hoping that we would find some nice gastropubs with good local food.  Unfortunately too many places stank of stale beer, which immediately killed our appetite.  
However, we were lucky to come across this place in Bowness.  It was a boutique hotel/ pub/ restaurant called the Angel Inn, and served very nice food.  


I had fisherman's pie, which is a classic pub dish.  My husband's dish was a creative one - cumberland sausage made with duck.  They were both very good.  I really loved the flavour of smoked fish in the creamy pie!   


Apart from the nice pub food, there were two things I wanted to try in the Lake District.   
The recipe was created by a woman called Sarah Nelson, in the late 19th century.  Now it is known world-wide (according to the owner of the B&B we stayed at) - but still the biscuits are sold only at this tiny shop in the tiny village of Grasmere.  When we arrived, we found many tourists queueing for the Gingerbread.


I like the packaging - very home-made looking.  However, it won't keep the freshness very long..  which gave us a good excuse to take a bite straight away.


I liked it, and it was very different from any other gingerbread I have tasted.   
It had an intense flavour of muscovado sugar and perhaps candied ginger.  The texture is quite dense and hard, rather than light and crunchy.  
Apparently the recipe is still a top secret - it is locked away in a bank vault, and there is no ingredient list either.  

Anyway, I was happy that it contained lots of dark brown sugar and ginger, as it suits my present diet.  I am trying to take these two ingredients to improve my blood circulation, so it was perfect (if you are in doubt about the effect of brown sugar and ginger, ask any Chinese person!)

The second thing I was after was Sticky Toffee Pudding of Cartmel.


They claim that the village is the home of sticky toffee pudding- but I don't think it means that sticky toffee pudding was actually born here...?    

Anyway, since I came this far, I had to try it.  
The pudding was not too sweet, and rather light.  
Of course with the toffee sauce and ice cream, it was a matter of time before it got very sweet and moist...  

I must say that a sticky toffee pudding is not something you want to eat every day.  
However I am sure it is a very comforting treat, especially when you imagine yourself feeling cold and tired after a long walk in the hills, on a freezing and dark winter day.. and then having this pudding with a nice cup of tea, by an open fire.   Well, then you can justify the calories too..


I am delighted that we could taste some regional specialities during this trip.  And, I look forward to discovering more!

さて、後編はおいしいものの話です。
イギリスでは、食事に力を入れるパブを一般に「ガストロパブ」といいます。湖水地方を旅行するにあたり、どこか、そんなパブで地元のおいしいものでも食べられるといいね、と言っていました。
ところが、宿で勧められたパブや、ネットで下調べしてあったパブは、行ってみるとあまり、食事したい雰囲気ではありませんでした。
どうしようか悩んでいたときに見つけたのが、Angel Inn という、ホテルに併設されたレストラン・パブでした。


私が注文したのは、上の写真のフィッシャーマンズ・パイです。
具とソースを深めの耐熱皿に入れ、上をパイ皮で覆ったものや、マッシュポテトで覆って焼いたものも、イギリスでは「パイ」といいます。これは後者。
中は燻製した魚にエビやムール貝などのクリームソースで、魚介のグラタンといった感じでしょうか。とってもおいしかった。上のうっすらと焦がしたマッシュポテトも、なんだか懐かしい味でした。
夫は下の写真のソーセージを注文しました。この地方ではカンバーランド・ソーセージという、うず状に巻いたソーセージが名物です。これはそれを模しながら、鴨肉で作ったというもの。こちらもなかなかでした。


おいしいパブごはん以外に、私が今回の旅行で目当てにしていたものが二つありました。
これは、サラ・ネルソンという女性が19世紀後半に作り始めたというお菓子で、今も変わらぬレシピで作られているのだとか。
グラスミア村の小さな店でしか買えないけれど、現在では世界中に知られているのさ、と、泊まったB&Bのおじちゃんが誇らしげに語っていました。
私たちが店に到着したときは、すでに大勢の観光客が列をなしていました。


お店の中では、昔ながらのエプロン姿の女性がジンジャー・ブレッドを売っています。
ノスタルジックな紙の包装は、これも昔ながらのものなのでしょうか。


これじゃ湿気やすいよねぇ...と、すぐに食べてみることにしました。
私は結構好きな味ですが、でも普通のジンジャー・ブレッドとはかなり違います。
一般のジンジャー・ブレッドは、粉末のショウガやスパイスを焼きこんだクッキーで、「ブレッド」といってもパンではありません。
これももちろんパンではないけれど、「さっくり」というよりは「しっとり」と「ばきっ」の間という、固い食感でした。味も濃厚な黒砂糖の甘みに、砂糖漬けらしいショウガが効いていました。昔のおやつ、という感じです。
このレシピは極秘だそうで、今も銀行の金庫にしまってあるのだとか。もちろん、原材料リストもありません。

ともあれ、現在私は血行不良を解消するため、黒砂糖とショウガを積極的に摂るようにしているので、個人的にはパーフェクトなお茶菓子でした^^

そして、二つ目のお目当ては、カートメル村のスティッキー・トフィー・プディングです。


この村は「スティッキー・トフィー・プディングの故郷」だそうですが、このプディングがこの村で誕生した、ということではないようでした。やや疑問は残りましたが、ここまで来たからには、味わうことなく帰るわけにはいきません。

スティッキー・トフィー・プディングというのは、ナツメをたくさん使った、スポンジ状のお菓子です。トフィーソース(バターいっぱいのキャラメルソース)をたっぷりかけて...というか、ソースに漬かったような状態で出され、アイスクリームや生クリームを添えて食べます。
こちらのものは、意外と甘み控え目で、スポンジも軽めでした。
が、食べ進むうちにソースに浸って、アイスクリームが溶けてきて...やっぱり甘くてどっしりになってしまいました…。

甘いし重いし、毎日食べられるようなデザートでは決してありません。
でも、この湖水地方で、寒い雨降りの冬の日、さんざん丘を登ったり下ったりしたあと、暖炉の火にでもあたりながら、このプディングを食べるのだとしたら...。
おいしい、濃い紅茶と一緒に味わいながら、ゆっくりと疲れを癒せるのだとしたら、... しみじみおいしそうです。
(そんな状況だったら、カロリーも気にしないですみそうですし)


少しではありましたが、今回の旅行ではイギリスの「地方の味」を楽しむことができました。
いつになるかは分かりませんが、次にまた、イギリスの田舎で新しい味を発見するのが今から楽しみです。

Lake District part 1/ 湖水地方へ(前編)

I haven't been a very frequent updater recently.. so this goes back a bit, but here are our stories from the Lake District.  We went there over the weekend, and enjoyed the beautiful scenery.

Since it was a relatively short trip (2.5 days), we focused mainly on the southern end, around Windermere and Grasmere.  When it comes to "English countryside" I was used to seeing the flat landscape from the Eurostar windows, so these hilly sceneries were so refreshing to my eyes.


We only did some leisurely walks, as we do not possess proper hiking boots...  I liked the walk around Lake Grasmere.  The air was cool and crisp, and we really enjoyed being in the nature.














We also took a short walk near Lake Windermere.  There were many people (and dogs) swimming in the lake.  I wonder how cold the water was..


Apart from the walk around the lakes, I enjoyed strolling around small villages, admiring the charming cottages.  Seeing sheep in the fields always gives me some childish joy (there aren't a lot of sheep in Japan), even after living in the UK for nearly 10 years.



Over all, it was a nice, refreshing short trip to the English countryside.  Next time when we go back, we will return with good hiking boots!

最近ずいぶん更新を怠っていました…
少し前のことになりますが、湖水地方へ、週末に行ってきました。

「湖水地方」とよばれる地域はかなり広範囲にわたりますが、2日半という行程だったので、南のほう、ウィンダミア湖とグラスミア湖の周辺に絞って行動しました。
ロンドンを離れると、イングランドの田舎の景色はとてもきれいです。
それでも、田舎といえば南部のなだらかな景色に慣れてしまっていたので、起伏のある風景が新鮮に感じられました。


湖水地方には丘陵地を歩きまわるハイキングコースがいくつもあるのですが、スニーカーで来た私たちは、比較的平坦なコースしか歩きませんでした。
それでも、爽やかな空気の中、湖畔を散歩するのはとても気持ちよく、軽い運動としては最適でした。道端のブラックベリーを摘んでみたり、魚釣りする人を眺めたり。
下の写真は、グラスミア湖畔のものです。














こちらはウィンダミア湖。グラスミア湖に比べるともう少し観光化された印象を受けました。
なぜかこちらの湖では、泳いでいる人や犬がたくさん...。結構水は冷たいと思うのですけど。

湖畔の散歩も気持ち良かったけれど、村の散策も楽しみました。
この地方のコテージは、薄い石を積み重ねたような、独特のものでした。建てるの大変そう...??
どこに行っても、ヒツジがたくさんいました。
イギリスに住んで通算10年ほどになりますが、それでも間近に羊の群れをみると、ついシャッターを切ってしまいます。



短かったけれど、イギリスの田舎を十分に楽しんだ旅行でした。
次に湖水地方に行くことがあったら、そのときはちゃんとしっかりとしたハイキング・シューズを持っていきたいと思います!
