Pierre Hermé in London/ ピエール・エルメ、ロンドン上陸!

I often told my friends in Japan that it is unfair that some Parisian delicacies you can get in Tokyo are not available in London, even though London is much closer to Paris than Tokyo.  For example, chocolates from Jean-Paul Hevin, and macaroons from Pierre Hermé.  Well, now one problem is solved.  Pierre Hermé has arrived in London.
The boutique opened several weeks ago inside Selfridges.  I went there today to check it out - and bought four tiny macaroons.  It came up to £6.80..  I can't remember how much it was in Paris, and have no idea what it would be in Japan, but well, even by London standards, I must say it is rather pricey.

We bought the ones with green tea & sesame crunch, lemon & praline, strawberry & balsamic vinegar, and caramel beurre salé.  I think the green tea macaroon was the most creative one- if I guessed correctly, it was green tea and white chocolate ganache with black sesame crunch.

....mmm.
I think I will go back, remembering some of the exceptional macaroons I have tried from PH.  However, the ones I tasted this time were not the best..  slightly disappointed (also they don't do pastries - just macaroons and chocolates..).

私は度々、「ロンドンのほうがパリに近いのに、東京のほうがパリのものが手に入りやすいなんて…」とこぼしていました。具体的には、たとえばジャン=ポール・エヴァンのチョコレートとか、ピエール・エルメのマカロンとか(なので、ラデュレが東京より先にロンドンにオープンしたときは、なんとなく誇らしかったものです)。
が、しかし!とうとうエルメがロンドンにオープンしたのです!
数週間前に、セルフリッジというデパートのフードフロアにオープンしたのですが、なかなか行かれず、今日ようやく行ってきました。
4つ、小さなマカロンを買って、6.80ポンド(約900円)。
パリでいくらだったか覚えていませんし、日本での値段も見当つきませんが、物価の高いロンドンでも、高い…と思いました(東京はもっと高かったりして…1個200円以上??)。

買ったのは、グリーン・ティー&ゴマ、レモン&プラリネ、イチゴ&バルサミコ、塩バターキャラメルの4種類。グリーンテ・ィーのものが、一番独創的でした。
たぶん、ですけれど、緑茶入りのホワイトチョコレートのガナッシュに、黒ゴマのカリカリしたのが入ってました。もうちょっと、緑茶の苦味がほしいところでしたけど。

うーん…
正直言って、今回のマカロンはやや期待はずれでした。
でも、次回に期待して…(シーズンごとにフレーバーを変えるので)きっと、また買いに行ってしまいそうです。
お店にはチョコレートとマカロンしかなかったのですが、ケーキも売ってくれたら嬉しいなぁ…。

Late night cream tea/ 夜更けのクリーム・ティー

Today.. by some kind of miracle or curse, some clotted cream suddenly appeared in my kitchen.  Since it's there, I had to do something with it.

But..  do what?

Obvious answer - of course, BAKE SOME SCONES AND EAT WITH IT!!

So, while cooking dinner, I baked some scones..
When I think about it, this week I haven't been to any afternoon teas, and have no plans to go in the near future.  Therefore, I guess it was perfectly justified that I baked some scones to have with the clotted cream.  Yes.  It makes perfect sense.

I tried a new recipe for the scones - it uses cream and frozen butter.  I was curious what the outcome was going to be like.  It turned out pretty well- crusty outside, moist inside, rather rich but not heavy.

This is my "miracle cursed clotted cream".  I quite like the way it is "stringy" - a sign of freshness and the right quantity of moisture. We tried to be decent, and just shared a scone (half each) for dessert.  I eat scones for breakfast too, why not for dessert...

I asked my husband if he thought scones and clotted cream could be addictive.  He said No.  Well, I think differently...

奇跡なのかそれとも呪いなのか分かりませんが、今日突如として、我が家のキッチンにクロテッド・クリームが出現しました。
あるからには何とかしないといけません。

何をするか。

当然、スコーン作りです!!
というわけで、夕飯の支度をするかたわら、スコーンを焼きました。
考えてみれば、今週はあフタヌーン・ティーに行っていないし、このあとに行く予定も、しばらくはないし。家でスコーンを焼いて、クロテッド・クリームをつけて食べたって、別になんの問題もありません。そう、まったくもって、道理にかなっているわけです。そうです。そのとおりなのです。

今回は、新しいレシピに挑戦です。
クリーム入りで、バターはかちかちに凍らせる、というもの。どんな出来上がりになるか楽しみでした。
なかなかいい出来だと思います。外側はさっくり、中はしっとり、リッチだけど重過ぎなくて、いい感じです。

こちらが「出現した」クロテッド・クリーム。糸をひくようなねっとり感がいいですね。これはおかしいんじゃないか?という人もいるようですが、これで正常です。

夕飯あとなので、まあ控えめに、一個を夫と二人で半分ずつしました。まあ、デザートですね。
アフタヌーン・ティー用のものだとはいいますが、我が家では朝食に食べることもあるので、デザートでも何でもありです。
(体重には悪影響でしょうけれど...)


夫に、「スコーンとクロテッド・クリームって中毒になると思う?」ときいたら、「それはないんじゃないの」という返事でした。
私は...違う意見ですが...まあ、それは今回は置いておくことにしましょう。

またそのうち、クロテッド・クリームが出現したときに分かることです。

旧正月の小龍包/ Chinese New Year

今日は旧正月の元日(というのでしょうか...)。
そのためにわざわざ出向いたわけではなかったのですが、たまたま用事があって近くまで行ったので、チャイナタウンによりました。

お祭り気分一杯です。

お腹が空いていたので、ここまできたらやっぱり中華にしよう、ということになりました。
行ったのは、台湾系のお店です。香港が植民地だった関係で、ロンドンにある中華は広東料理のお店がほとんど。台湾料理のお店というのは珍しいのです。

ここでの私のお目当ては...小龍包。
それと、四川風麺というのがあったので頼みました。坦々麺みたいなのかなぁ…と楽しみだったのですが、出てきたのはこんな麺でした。

スパイシーのはずだったのですが、なんだか甘い。イマイチ。ジャージャー麺ぽい見かけではあるけど、甘いのってヘンな感じでした。もう一つの台湾・ビーフ・スパイシー・ヌードルもイマイチ。

ですが、小龍包は外してませんでした。


一個目は案の定、口の中をやけどしそうになったので、2個目は慎重に。
小龍包って何でこんなにおいしいんでしょーう。ぱくぱく4個も頂いて、幸せな気分になれました。

イギリスではよくコンフォート・フード(Comfort Food) という言葉を耳にします。旅先で恋しくなったり、旅先から戻って食べると、ほっとする食べ物、というような意味です。
私の場合、海外生活が長くなっても、やっぱりお茶漬けなんかがまさにコンフォート・フードです。
今回小龍包を食べて、中華もかなりコンフォート・フードだなあ、とあらためて思ったのでした。

坦々麺食べたい…おねーちゃん、帰ったら一緒に行こうね。

Today was Chinese New Year (which we don't really celebrate in Japan).
My husband and I went to China Town, but it was not because of Chinese New Year.  We had an errand to run nearby, and decided to go to one of the Chinese restaurants, as we were getting hungry.

It did look festive..

We went to a Taiwanese place, which is quite rare in London, as most of the Chinese restaurants are Cantonese.  We had been there before.. and my favourite thing on the menu was Shao long bao (dumplings with minced pork and soup encased).
We also ordered "Szechuan Spicy Noodles".  I was imagining something like "tan tan noodles", spicy noodle soup with minced pork.

I was disappointed..

It was NOT spicy!!  It was rather sweet..  strange.  The other noodles we ordered, Taiwanese spicy beef noodles were not that great either.

However, the shao long bao didn't let me down..! Yey :)


I nearly burnt my tongue on the first one, as I always do with shao long bao.  It was worth it, though.  I took more care eating my second, third and the fourth dumpling.  I truly loved it.  Yum.

I think something like this qualifies as comfort food for me - even though it is not really Japanese food.  Chinese food is seriously part of Japanese cuisine today, and I feel I grew up with Chinese food and Chinese flavours (though Chinese people might argue that Japanese-Chinese is different from the "true" Chinese food - which I agree with).

Mmm..  I still do miss tan tan noodles..

Tea at Dorchester Hotel/ ドーチェスター・ホテルでアフタヌーン・ティー

I went to the Dorchester Hotel today for.. another afternoon tea with Momo.  This was the final place on our list (for the time being).

Afternoon tea is served in a lounge area called the Promenade.  It had a luxurious and elegant atmosphere.  As we walked in, a pianist was gently playing the piano, and we were seated at a table not too far from him.

At Dorchester, they first bring the sandwiches on a tray, and serve you the ones you choose (or all of them).  After the sandwiches, pre-dessert was brought in.  Panacotta with raspberry jelly.  Momo said that the jelly was not set with gelatine, but with pectin.  The kind of thing you learn when you have tea with a pastry chef..

After that, scones and pastries arrived.
Scones were served with clotted cream and two home-made jams: black currant and strawberry.  I quite liked the tang of the black currant jam.

The selection of cakes- two chocolate based ones (praline & caramel, and choc sponge with cherry jelly), "bomb" of black currant and black cherry, rhubarb crumble tart and pistachio sponge with raspberry.  The shockingly red stuff is raspberry powder.  The friendly waiter who was amused with our enthusiasm told us that the raspberry powder was especially made in the hotel kitchen.  We thought the "bomb" was very creative - "Hmm, I think I want to steal this idea" was Momo's comment..


We enjoyed the atmosphere, the music, the tea and the pastries, ...and when we realised, all the tea guests were gone, and people around us were having drinks and dinner...


So, in the past few weeks, I have tried as many as six different hotels' afternoon tea.  I can't say which hotel's is my top favourite.  But one thing is for sure - now I want to try even more afternoon teas...!
I better watch my bank account and my waist line..

今日はドーチェスター・ホテルに行きました。目的は...アフタヌーン・ティーです...。
今回もMomoが付き合ってくれました。ここが、(とりあえずは)今回のアフタヌーン・ティー・ツアーの最終目的地でした。


アフタヌーン・ティーがサーブされるのはプロムナードと呼ばれる、奥行きのあるラウンジです。豪奢な雰囲気。ちょうど、ピアニストに程近い席に案内されました。音楽もいい感じです。

ドーチェスターでは、サンドイッチはトレイで運んできます。どのサンドイッチがほしいか伝えて(または、全部)、お皿にのせてもらいます。
そのあとはプレ・デザート。パンナコッタとラズベリーのゼリーでした。「これ、ゼラチンじゃなくて、ペクチンだね」とMomoの指摘。パティシエとアフタヌーン・ティーに行くと、普通じゃつい見過すことにいろいろ気づかされます。

トレイは2段で、スコーンのお皿とケーキのお皿が運ばれます。
スコーンには、クロテッドクリームと2種類のジャムがついてきました。自家製のイチゴとブラック・カラント(カシス)のジャムです。ブラック・カラントは酸味がきいていて美味しかった。

こちらがケーキ。チョコレートベースのものが二つ(プラリネとキャラメルのものと、チョコレートスポンジにチェリーのゼリーを重ねたもの)、ブラック・カラントとダークチェリーのムースとオレンジ・ブロッサムのスポンジを球体に合わせたもの、ルバーブのクランブルタルトとピスタチオのスポンジとラズベリーのケーキ。
真っ赤なのは、ラズベリーのパウダーです。かわいいウェイターのお兄ちゃんが、「このパウダーもホテルで作ってるんですよ」と説明してくれました。まあ、ここまで質問攻めにして、ノートとってる客もそういないだろうよ...(それとも日本人客はみんなやってる??)。

特に球体のケーキは視覚的にインパクトありました。Momo なんて、「うちのホテルでもこれ作ろうかな」なんて言っていました。

雰囲気もよかったし、サービスもよかったし、お茶とケーキを楽しんで、おしゃべりに花を咲かせていたら、あっという間に時間が過ぎてしまいました。思わず、あわてて帰り支度をしました。


今回、いくつものアフタヌーン・ティーに行きましたが、どこが一番!とはなかなか言えません。でも、ひとつ言えるのは、...もっとほかのところも行きたい!ということ。
病気でしょうかね。
お金と体重が心配です。

フェルナンデス&ウェルズ/ Fernandez & Wells

先日、取材でFernandez & Wells というお店に行きました。
ここのコーヒーが、とってもおいしくて…もう一度飲みたくて…つい今日、もう一度行ってしまいました。

オーナーは、フェルナンデスさんとウェルズさん。フェルナンデスさんは、もともと Monmouth Coffee で働いていたということです。
モンマス・コーヒーといえば、コーヒー好きで知らない人はいないという、コヴェント・ガーデンにあるコーヒーの名店です。なるほど、と思いました。

きめ細かな泡、深い味のコーヒー、ミルクの自然な甘さがいい感じです。
コーヒーアートもかわいい。

これはStumpy。


Stump というのは木の切り株などを意味する言葉で、あまり深くないカップでサーブすることからつけた名前とか。

ミルクの量がラテよりも少なく、コーヒーとほぼ同量なので、より強くコーヒーが味わえます。コーヒーは濃い…けど、苦くない。

ほんとに、いいお店を見つけました!取材できてよかったわー ^^
最近はチェーンのコーヒー屋さんが多くて、便利は便利…です。
でも、こういう独立した、個性あるお店のほうがやっぱり嬉しい。
すぐ近くに同じオーナーによる同名のワイン・バーもあるので、そちらもそのうち行ってみたいと思います。

I went to a café called Fernandez & Wells the other day, to write an article about them.
Their coffee was SOOOOO good.. that.. I went back again today.

The owners of the café are Mr Fernandez and Mr Wells.  Apparently, Mr Fernandez used to work for Monmouth Coffee - that Monmouth.    I love Monmouth's coffee too.  

This is their Caffe Latte. →
Delicate foam on the top, deep aroma of coffee and tender sweetness of the full-fat milk.  It was really good.

This one is called Stumpy.

They named it Stumpy, as it is served in a short glass.  They use almost the same quantity of milk to espresso, so the flavour of coffee is more intense than in the  Latte.  The coffee is pretty strong.. but not bitter.  I loved the harmony of the flavours.

This place really is a gem!  I am glad that I was given this assignment :)
I do appreciate that there are now chain-operated coffee shops everywhere, as it is very convenient when you want a quick shot.  But of course, I am more attracted to independent coffee shops that are unique (especially when they serve such good coffee!)
Fernandez & Wells also have a wine bar just next door.  I'm looking forward to try that one too..

ブラウンズ・ホテルでアフタヌーン・ティー/Tea at Brown's

今日は...今日も...アフタヌーン・ティーに行ってきました。
今日はブラウンズ・ホテルです。こちらは昨年2009年度のロンドンにおけるベスト・アフタヌーン・ティーに選ばれた場所でもあり、ヘッド・パティシエを勤めるファビアンは、昨年取材に訪れて以来、ちょくちょく会っています。
今回も、友人のMomoが付き合ってくれました。彼女も勉強熱心です...。

ブラウンズのお茶は、English Tea Room というラウンジでいただきます。取材でお茶をいただいたことはあったのですが、お客として来るのは初めてでした。

こちらのスコーンは、ファビアンがシェフに就任してから、数ヶ月かかって完成させたというもので、卵が入らず、しっとりと口の中で溶けるような感触が特徴的です。
もしも行くことがあったら、底を見てみてください。下火を使わず、上火だけで焼き上げるので、底は白く仕上がるのです。シェフのこだわりですね(笑)。

ケーキ類は、マカロン(オレンジ&チョコ)、ルバーブのクランブル、バナナのカップケーキ、プロフィットロール、レモンタルト。どれもかわいらしい大きさで、頼むともっと持ってきてくれます(十分でしたが..)。ファビアン自身が以前言っていたのですが、どれも比較的シンプルなケーキです。私は結構好みです。甘すぎないのもいいね、とMomoと言い合ったのでした。

嬉しかったのは、まだアフタヌーン・ティーには登場していない、新メニューのケーキ類を、ファビアン自らが持ってきてくれたことでした。ふふふ。めったにない特典ですよね。

初お目見えの特別パティスリーは、ヨーグルトとルバーブのマカロンに、アップルクランブルのカップケーキ。白っぽい色合いが、冬らしい。
この、ヨーグルトとルバーブのマカロン、とってもおいしかった!
またこれ目当てに行きたいくらいです。

スタンドのケーキを食べ終わる頃、今度はワゴンサービスでヴィクトリア・スポンジとダンディー・ケーキが登場します。ヴィクトリア・スポンジは、ヴィクトリア女王が好んだといわれるケーキで、クリームとジャムをサンドしたもの(そのため、別名ヴィクトリア・サンドイッチとも)。かなりシンプル…女王様、庶民派だったのでしょうか。

ダンディー・ケーキは、スコットランドのダンディーという街に由来する、ドライフルーツたっぷりのケーキです。
お腹一杯...といいつつ、しっかり一切れずつ頼みました。特に、ダンディー・ケーキは重すぎず、しっとりとしておいしかった。

食べ終わったら、ほんっとうにお腹が一杯でした。




ファビアンは、季節に合わせて結構頻繁にメニューを変えるので、数週間後には上記の新ケーキも登場する予定のようです。春、夏...季節ごとにまた来たくなってしまいました。

Today I went for afternoon tea.... again.  It was at Brown's Hotel.

It was about a year ago that I visited Brown's Hotel for the first time, to write an article about their afternoon tea.  I met Fabien, the Head Pastry Chef on that occasion, and since then we've kept in touch.  He introduced me to other pastry chefs in London, which was exciting and interesting for me.
However, this was the first time that I came as a guest, and I had really been looking forward to it.  Again, my good patissière friend Momo joined me, to do a "thorough examination" of all the scones and cakes.
Afternoon tea is served in a room called the English Tea Room on the ground floor.  As we comfortably took our seats in a quiet corner, the three-tiered stand arrived on our nicely set table.

Fabien once told me that he spent several months perfecting the scone recipe.  Brown's scone is paler than other hotels', as it contains no egg, and it has a melt-in-the-mouth texture.  I like the look of it - it doesn't have the "wolf's mouth" crack, but is smooth on the side.  Very cute.
If you have an occasion to visit Brown's for tea, flip over the scones- the bottom has no colour, as they bake only with the upper fire in the oven.  Interesting trivia, isn't it?

On the top plate, there was a macaroon ("Jaffa" - orange & chocolate), rhubarb crumble with shortbread, banana cupcake, profiterole and lemon tart.  They were all very delicate and pretty.  Fabien says that he keeps his patisseries rather simple, and I quite like it that way.  Momo and I also liked the fact that these cakes were not over-sweet at all.  Even though they are packed with butter and cream, they taste rather light.

A happy surprise was that Fabien himself came to join us for a few minutes, bringing some brand-new pastries that were just created in the pastry kitchen.  "You are the first ones to taste these outside of the kitchen!" was what he told us.  What an honour :)

They were yoghurt and rhubarb macaroon and apple crumble cupcake.  They both looked very wintery- made me think of snow-covered mountain and fields.  I must say that my favourite was this yog & rhubarb macaroon.  It was sooo good.

When we finished the cakes, one of the staff came around asking if we wanted more pastries.  We said no, thank you.  We were full.
However, when they came around with a wagon trolley with Victoria Sponge and Dundee cake, we asked for a slice each.  I liked the Dundee cake very much, as it was moist but not heavy, and had a really nice flavour.
After eating our two final cakes, we were really, really full..

I know that Fabien changes his Afternoon Tea menu frequently.  I suppose the new macaroon and cupcake will be served very soon.. unless they already are.  It makes me want to go back again and again, to try his new creations.  Dangerous..

Apple Jam/ リンゴジャム

I read once that Britain has got 3,000 varieties of apples.  
At supermarkets, however, you won't find that many kinds- nonetheless, most of the apples I see in the UK are not common in Japan: Cox, Braeburn, Spartan, Empire, Royal Gala, Pink Lady, Egremont Russet..  

I think my favourite apple in the UK is Cox.  Although it tends to get soft quickly, I love the flavour.  It's got a nice balance of sweetness and acidity.
The other day, I found that one of the Cox apples that I had recently bought got a bit soft, so decided to make it into apple jam.






As an experiment, I decided to add Egremont Russet too.  Egremont Russet has a skin that almost looks like Japanese pear.

This is how I make my apple jam..  I chopped three apples (2 E.R and 1 Cox), tossed in sugar (half of the weight of apples), squeezed some lemon juice (and add in the lemon too- best if it's organic), and broke a cinnamon stick, and left like that for about 20min.





Water (or apple juice) starts appearing, so you don't need to cover the apples with any extra water.  Then I put the pan on the hob, brought to a boil, reduced heat, and removed the scum that naturally forms on the surface as much as possible.

I cooked until the juice was nearly gone, for about five minutes.   If you like a puree texture, you can mash the flesh with a wooden spoon, but if you like the bits, just like in apple pies, you can leave it like that.  This texture normally depends on what kind of apple you use: both Cox and E.R seem to retain the shape and crunch.  Finally, I removed the lemon and cinnamon stick, and poured it in a sterilised jar.  To sterilise the jar, I washed an empty jar first, then put it into a cold oven, and heated it to 150c and left it for a few minutes.

Using half the weight of apples worth of sugar is not enough to preserve the fruit very long - though this jam will still taste quite sweet.  For this reason, I don't try to keep this jam too long.  It's good with toast, but I think I will enjoy it the most with yoghurt.  Yum.

なんと、イギリスには3000種類ものリンゴがあるそうです。
もっとも、スーパーなどではそんなにたくさんの種類を見かけることはありませんが...。それでも、コックス、ブレーバーン、スパルタン、エンパイヤ、ロイヤル・ガラ、ピンク・レディー、エガモント・ラッセルなど、日本では見かけることも、耳にすることもないリンゴがいろいろあります。

私のお気に入りは、コックス(正確にはCox's Orange Pipin)。買って数日で、実が柔らかくなってしまうのが難点ですが、酸味と甘みのバランスが良くて、緑色と赤の野生的な色合いもかわいらしく、よく食べます。手のひらに収まるほどの小さいものもあり、おやつに食べるのにちょうどいい大きさです。
家に、残念ながら柔らかくなってしまったコックスがあったので、ジャムにすることにしました。
ついでにエガモント・ラセットも入れてしまいます。これは、日本のナシみたいな皮のリンゴで、爽やかな酸味とリンゴらしい香りを持つ品種です。

作り方…というほどのものでもないのですが、こんな感じで作りました。

リンゴはイチョウ切りにし、リンゴの半量にあたる砂糖、レモン半分(絞って、皮をそのまま入れる。無農薬)、シナモンスティック1/2本を折って、全部ナベに入れます。ホウロウびきのものか、ステンレスのものを使ってください。ざっと混ぜて、そのまま20分ほど放置します。


そうすると、リンゴの水分が出てくるので、それをそのまま火にかけます。この上水分を加える必要はありません。
中火で熱するうち、もっと水分が出てきます。アクが浮いてくるので、できるだけすくいながら、沸騰させます。沸騰したら少し火を弱め、水分がほとんどなくなるまで5分ほど煮詰めます。
ピュレ状のジャムが好きなひとは、この時点で実をつぶします(リンゴの種類によっては、勝手に煮崩れますが…)。
レモンとシナモンスティックを取り除いて、殺菌したビンにジャムを移したら出来上がり。
私はビンは、洗剤で洗ったあと、オーブン(余熱無し)に入れてから150度に熱し、数分間入れておきます。

リンゴの半分の量の砂糖というのは、保存の面からいうと、多いとはいえないようです。味は、かなり甘いのですけど。なので、私はあまり長く置いておかず、すぐに食べてしまいます。
トーストにもあいますが、私はヨーグルトと食べるのが好きです。
