Genoa Part 1/ ジェノヴァへ Part 1

The day after Christmas-

From where my husband's parents live, Italy is very close.  So the four of us crossed the border, and went to Genoa for a short trip.  It took about three hours by car.

Unfortunately Genoa was very cold, and also wet.  Walking through cold rain shower, we arrived at a restaurant near the Old Port, or Porto Antico, where I had my trofie al pesto Genovese.


I was surprised how bright green it was, and also that it was not just boiled pasta but there was also some cubed potato in the dish (high carb..).
I had a few things on my "to eat" list in Genoa.  One ticked off.

We couldn't do much that day, for it was a Sunday and also the day after Christmas, so not a lot was going on.


We walked around town, hoping to find something interesting - but were not very lucky.
At least the hotel we stayed was very nice, so we decided to go back and enjoy our afternoon coffee break by the big Christmas tree.


Finding a good restaurant for dinner that was open proved to be a trickier task than we thought.
In the end, we followed the recommendation of the receptionist lady, and went to a seafood restaurant.

I don't think everybody was happy with their choices (my husband had a small mountain of tiny deep-fried and bony sardines and nothing else), but I was one of the lucky ones - my shellfish pasta was excellent.









After the dinner, I had a strong desire to look for a gelateria that was open, even in the cold or rain.
However - decided to respect the desire of others - i.e. go back to the hotel & have some digestif...

クリスマスの翌日。
夫の両親の住むところから、イタリアの国境はかなり近くです。ということで、4人で車でジェノヴァまで小旅行に行くことにしました。車で約3時間の道のりです。

到着したジェノヴァはあいにくの雨模様で、気温もかなり低めでした。
とりあえずお昼にすることにして、霧雨の中ポルト・アンティコ(旧港?)にあるレストランまで歩きました。
ここで、ジェノヴァに来たら食べたいと思っていた、ジェノヴェーゼのパスタを頂きました。


驚いたのは、この鮮やかな緑!(着色料??)さらには、ジャガイモが入っていることにもちょっとびっくり。炭水化物過多じゃないんだろうか。
とりあえず、「ジェノヴァで食べたいもの」その1は達成です。

食後、街中を歩きましたが、クリスマスの翌日で、さらに日曜日だということもあり、かなり静かでした。開いているお店もまばら。
天気にも恵まれず、この日は大した観光も出来ずに終わってしまいました。


幸いにして、泊まっていたホテルはなかなか良いところだったので、午後は早めに切り上げて、ラウンジでのんびりしてコーヒーを頂きました。
大きなクリスマスツリーもいい雰囲気でした。


さて、夕食。
開いているお店がとても少なく、探すのに苦労したのですが、レセプションの女性のすすめに従い、港近くのシーフード・レストランに行きました。

残念ながら、どのお料理もおいしかった...わけではなさそうです(夫のメインは、骨の多い、小さなイワシのフライ山盛りでした。しかも付け合わせ無しで、それだけ)。
が、ラッキーなことに、私の貝類のパスタは当たりでした。貝のダシがよく出ていて(日本的な表現だ)、とてもおいしく頂きました。







夕食のあと、私としてはイタリアに来たのだから、ジェラート屋さんに行きたい...と思ったのですが、そこは団体行動ゆえ、ぐっと我慢しました。
明日に期待。

Christmas in southern France/ 南仏のクリスマス

We went to southern France for Christmas, where my husband's parents live.
My mother-in-law came to pick us at Nice airport, and on the way home, she told us that this year she didn't put up the traditional Christmas tree, but something else.




And, this was her new contemporary Christmas tree, which I thought was very unique and stylish.


So, Christmas dinner -
Since half of the family comes from Denmark, Christmas here always has some Danish touches.  However, since they are now in France, it has some French elements too - so, for the Christmas eve dinner, we had oysters to start, and then duck as a main course.


Dessert was very Danish: ris à l'amandes.
It's a rice pudding made with cream, vanilla and sugar.  It is a typical Christmas dessert in Denmark, and is always served cold with warm cherry sauce.
Being Japanese, I am not used to having rice as a creamy dessert.. but I am actually fond of it.
As always, it was very nice...  Yummmmm


One of the many things I like about coming here is the fireplace - they always laugh because I love taking pictures of the fireplace (and almost never get a really good one), and also because I am often found standing by the fire, "roasting my backside"...

年、明けてるんですけどね。

クリスマスには、義理両親の住む南仏に行きました。
空港に迎えに来てくれた義母が「今年はクリスマスツリーは飾らなかったけど、ちょっと別のことしてみたわー」と言うので、何かと思っていたら...



近くで拾った流木(というところがすごい)を大きな甕に入れ、デコレーションしていました。
なかなかモダンで素敵です。


そして、その晩のディナー。
義母方はデンマーク人のため、デンマーク風なのですが、ここはフランス...ということで、フランスの要素もあり、という内容です。

前菜は牡蠣、メインはデンマーク風に鴨を頂きました。


デザートもデンマーク風で、ライスプディングです。
冷たい、バニラ風味のライスプディングなのですが、熱いチェリーソースと一緒にサーブします。
ゴハンのデザートは、日本人にはちょっと...ということがありますが、私は結構好きです。


冬に義父母の家に来ると、楽しみなのが暖炉です。
私がいつも写真を撮っていると言って、みんなには笑われるのですが。

写真だけじゃなくて、その前でぼけーっとしたり、背中を向けてぬくぬくするのも大好きです。
おシリがあったかいのって、なんだか幸せだと思いませんか?
(私だけ??)


そのうち、ぬくぬくじゃなくて、ジリジリしてくるんですけどね。

Brown's Christmas Afternoon Tea/ ブラウンズホテルのクリスマス・ティー

I have been to Brown's for afternoon tea several times, but I had never been to their Christmas afternoon tea.

So, here we are-


We were seated by the fireplace.  I love sitting by the fire, perhaps because it is something we seldom get to do in Japan.  It was very warm - in fact, a bit too hot..

To our surprise, two glasses of champagne were brought to our table.  The lady explained that they were offered by my friend Fabien, who is the head pastry chef at Brown's.  It was so sweet of him :)


And, around the time we finished our bubbly, the three tiered stand was brought in.

So, this is the Christmas Afternoon Tea, which is a bit different from the normal one.  To begin with, there was a turkey & cranberry sandwich!







Then, Fabien himself came around to say Hi, and he spent some time with us.


I took this opportunity to ask him some questions about the pastries.  So, the pastries are cranberry macaroon (far left), cloudberry mousse, lemon & ginger cupcake with Christmas tree frosting, chocolate tart, and orange and yoghurt mousse cake.
He told us proudly that Brown's perhaps is the only place that makes desserts using cloudberry, or knotberry, as it is also known in the UK.  My favourite was this mousse.  I like cloudberry very much, which is much more common in Nordic countries.


Even the scones were a Christmas edition - we had plain ones, cranberry & orange, and delicately made mince pies.

I liked the orange & cranberry scone very much.  As I remembered, these scones had the melt-in-your-mouth texture.


I was showing the bottom of the scones to my husband, explaining "You see, this is how they do scones here - white bottom!" - he told me that I was a Scone geek.  I take this as a compliment.

When you think you have finally won the delicious battle against the heap of food, comes the trolley, carrying the famous Christmas cake.


Fabien had been telling me that he bakes tons of Christmas cakes in January every year, and then every month, he and his team take them out and soak with brandy.  I was looking forward to trying it.  It was very rich and very tasty.  
And, I was quite happy that this was the end of our indulgent afternoon tea...

We were even given a goody bag to take back home, and we found two Santa Claus gingerbread men in it.


My god..  how am I supposed to eat this happy looking fellow????  Agony...

ブラウンズ・ホテルのアフタヌーン・ティーには、今までに何度か行ったことがあるのですが、こちらの、クリスマス・アフタヌーン・ティーには行ったことがありませんでした。

ということで、今年初めて、クリスマスのお茶を頂きに行ってきました。


案内されたテーブルは、暖炉の前。
ちょっと暑かったけれど、雰囲気は満点です。

そして、席に着くと、「ファビアンからです」とシャンペンが運ばれました。ファビアンは、ブラウンズのヘッド・パティシエを務めている友人です。ありがとう^^
おいしいシャンペンでした(ますます暑くなってしまいましたが)。


シャンペンを飲み終わるころ、三段のスタンドが運ばれてきました。

クリスマス仕様です。













間もなくして、ファビアン自身が顔を出しに来てくれたので、ケーキのことをいろいろと訊きました。


左上から時計周りに、クランベリーのマカロン(クランベリーはクリスマスにつきもです)、ホロムイイチゴのムース、レモン&ジンジャーのカップケーキ、チョコレートのタルト、オレンジとヨーグルトのケーキだそうです。
明かりがやや暗めで、あまり綺麗な写真が撮れなかったのが残念。
ホロムイイチゴは、私はクラウドベリーという名前で知っていましたが、イギリスでは knotberry とか knoutberry ともいうそうです。「ロンドンでこのベリーを使ったお菓子を作っているのは、ブラウンズだけかな」とファビアンがちょっと誇らしげに言ってました。
北欧ではポピュラーなベリーで、スウェーデンなどでよくジャムにます。
このムースも、とっても美味しかった。


スコーンもクリスマスには特別なものを焼いています。
プレーンのものと、クランベリー&オレンジのものと。そして、可愛らしいサイズのミンスパイも付いてきました。ミンスパイはたっぷりのドライフルーツとピールを使ったミニタルトで、イギリスのクリスマスには欠かせないものです。

私はスコーンの底の部分を夫に見せ、「ほら、底が白いでしょ!これがブラウンズのスコーンよ」と。

夫はひと言、「スコーンオタクだね...」。

しっとり、ふんわりのおいしいスコーンでした。

ようやく全て食べ終わった...
と、思う頃にやってくるのが、クリスマスケーキをのせたワゴンです。


このクリスマスケーキについては、ファビアンから何度も話を聞いていて、食べたいなーと思っていました。
なんと、1月に大量に焼き上げて、その後毎月ブランデーを一つ一つのケーキにふりかけながら、一年近くかけて熟成させたというものです。
どっしりとリッチな生地で、美味しいフルーツケーキでした。

もちろん、その晩の夕飯は抜きです。

ファビからはお土産をもらって帰ったのですが、家に帰って開けてみたら...サンタクロースのジンジャーブレッドが登場しました。


こんな愛敬たっぷりのサンタさんなんて...食べられるわけないじゃん...(涙)

Pumpkin Muffin/ かぼちゃのマフィン

Finally, I got around to bake some pumpkin muffins! 


I made some pumpkin purée with a bit of butter, sugar and cinnamon, and placed this on the top of the muffin dough, and sprinkled some brown sugar crumble topping and pumpkin seeds.

As I wrote at the beginning of this year, I have been trying several different recipes for making muffins.  I concluded that I prefer using melted butter and not vegetable oil, and not to cream the butter but rather fold in melted butter. 

The best way to enjoy muffins is to eat fresh from the oven, warm.  However, you can also freeze them.  You should defrost at room temperature, and then re-heat in the oven for about 5min at 170c.  These make a lovely weekend brunch!

なんとか、旬が終わる前にかぼちゃのマフィンを焼くことができました。


かぼちゃをつぶして、バター、砂糖、シナモン少々を混ぜて練り上げたものを、マフィンの生地に大匙1くらいずつのせます。その上から、ブラウンシュガーのクランブルとかぼちゃの種を散らして焼きました。

今年初めに書いたとおり、だいぶいろいろなマフィンのレシピを試しましたが、私はサラダオイルよりもバターを使ったもののほうが好きです。
個人的な好みだと思いますが。

マフィンはもちろん焼きたて、あったかいうちに食べるのが一番おいしいのですが、私はよく冷凍してしまいます。室温で解凍し、170度に予熱したオーブンで5分ほど焼くと、出来たてに近いおいしさが楽しめます。
朝起きてから焼くと、結構待たせることになるので...。

The most hideous dessert ever/ 過去最悪のデザート

What was the worst dessert you have ever had?
I often had fantasies about my dessert nightmares (call me weird), but when my worst dream came true, this was what I had.


For those who are not familiar with it, this is a British style dessert called trifle (which can be very nice).
I think it is almost unforgivable that this was served in a well-known restaurant which is quite popular (Café Ang..).

The dessert had a bottom layer of sherry-soaked sponge set with jelly, and a middle layer of wobbly custard and whipped cream, topped with candied violet, angelica, sliced almonds and glacé cherries.
Pure kitsch.

My husband had a food poisoning late that night.
He thought it was the oyster he had, but I was convinced that it was the dessert.

私はよく、「どんなデザートが自分にとって最低かなぁ」という想像を巡らせるのですが(ヒマですね)、その悪夢がこの日、現実となりました。

ご存じない人のために申し上げますが、これはイギリスのトライフルというデザートで、作り方次第ではおいしいものです。
今回のものは、シェリー酒に浸したスポンジを赤ワインのゼリーで固めた上に、ぶるんぶるんのカスタード(カスタード味のういろう?)とホイップクリームを重ね、上に真っ赤なチェリー、アンゼリカ、スミレの砂糖漬けとスライスアーモンドで飾ってありました。
悪趣味、ここに極まれり。
これがしかも、有名な人気レストランでこれが出て来たってということが許せない...というか、腑に落ちない。

夫はその晩、食中毒をおこしました。
本人は「牡蠣にあたった」と言っていましたが、私はこのデザートのせいに違いないと思っています。

Birds in winter garden/ 冬の公園の野鳥観察

We saw our first snow already in November.  It is so unusual- this is the coldest winter I have ever had in London (I've lived here for a scary 8 years).
However, in central London the snow didn't stay on the streets after the first several snowfalls.  When it snowed last night, I thought that even if the snow doesn't stay on the pavement, it might do in the park..


..and I was right.


As usual, I brought my bag of nuts and seeds to feed the birds.  Not sure if you can do this in other places, but here, I always manage to feed the birds directly from my hand.
Robins are my regulars.  They are SOOOO cute, and I love them, but too often they scare away the poor blue tits, which are significantly smaller than robins.



Blackbird - I love it when they sing in the summer evenings.  They are a bit too big to come to my hand, so I normally throw some sunflower seeds near them.  They eat various things, from worms to berries.






..and, I don't know what this bird is..  I see them from time to time, but not too frequently or regularly.  Anyone know the name??

..and my husband to the rescue.  He figured out that this was not a magpie, but a "forestpie" in Danish - which made me think of a pie with berrries.. but in fact in English, is a Eurasian jay.

I read that the cold winters (last winter was pretty cold too) are giving wild birds a hard time finding food.  I know that hand-feeding is not the best way to save wild birds, but it is the only way I can feed them without also feeding the rats with wings (i.e. pigeons)!

今年の冬はとっても寒く、すでに11月のうちにロンドンでも初雪が降りました。ロンドン生活も長くなりましたが、11月の雪は初めてでした。
昨日もまたかなり雪が降ったので、ケンジントン・ガーデンズに行ってみました。路面には積もらなかったけど、公園ならもしかして、と思って...。



予想どおり。


例によって、ナッツやひまわりの種などを持って行きました。小鳥にやる餌です。手のひらにナッツ類をのせてじーっとしていると、鳥たちが餌をついばみに来ます。
コマドリは常連です。まんまるの目、ふっくらとした体、とっても可愛い小鳥です。
が、小柄なアオガラが来ると、威嚇して追っ払ってしまいます。
譲り合いの精神はあまり持ち合わせていません...。


こちらはブラックバード。
日本名はクロウタドリで、ツグミの一種だそうです。
春から夏にかけて、夕方になると良い声でピーコロピーコロ...と鳴いています。
黄色の輪の目に愛敬があり、ちょっと九官鳥風。
手のひらに乗せるにはちょっと大きすぎるので、大き目のナッツなどを近くに放ってやります。






で、この鳥は何なんだろう...誰か知らないかな、と思ってたら、夫が「デンマーク語でなら知ってる」と。

...ウィキペディアって便利ですね。
英語で Eurasian jay、日本でいうカケスだと判明しました。
日本ではカケスって、見たことなかったのですが。

このところ寒い冬が続き、小鳥たちは餌を探すのが大変だというニュースを読みました。
そんなこともあり、私は公園に行っては小鳥に餌をやっているわけですが、手でやるのがどこまで野鳥にとって良いことやら、分かりません。
ですが、これがリスや鳩に餌をやらないで済む、唯一の方法なのです。
小鳥に餌をやっているのが鳩やリスに見つかると、奴らは襲わんばかりに追っかけてきます。
そんなわけで私は、ヒッチコックの「鳥」を思い出しながら、毎回逃げているのでした...。

Scones with gooseberry jam/ グースベリージャムとスコーン

I know scones are normally for tea time.  However, sometimes scones + cream feels a bit too much for an afternoon treat, i.e. after lunch and before dinner.

So..  why not for brunch, as a part of a meal??



The excuse was that I finally opened the gooseberry jam that I made this summer.
For me, it is a MUST to bake scones when I have this jam.  The sharp tang cuts the richness of the clotted cream, and they go really well together.
I must say I like gooseberry jam as much as strawberry jam to have with scones!





I baked them in "hotel afternoon tea size" - about 4.5 cm.  Dainty.
However, I did not bake in the "hotel afternoon tea style".
My friend Fabien, who heads Brown's Hotel's pastry kitchen says that he always bakes his scones with uncoloured bottom.  He says the key is NOT to over-bake them, so that the centre stays moist.

As much as I like Fabien's melt-in-your-mouth, soft scones, I like mine too, which are golden and crusty (with browned bottom!)
I think it makes a nice contrast of texture when you bite into it.
This is what I love about home baking - do your way & experiment as much as you like.
I even cut out some of the scones in a triangle shape, so that I will have minimum cut-out leftovers - which I know that even Mr Head Pastry Chef (from hotel B) does when he's baking scones at home...

スコーンと言ったら、お茶の時間のおとも...というのがおきまりではありますが、ときにはスコーンとクロテッド・クリームの取り合わせが、ちょっとリッチすぎる、ということもあります。

ということで、我が家ではスコーンをブランチに食べることがよくあり。
食事の一端(しかも、カロリーを消費しやすい朝食)にしてしまえば、なんとなく罪悪感も薄れると言いましょうか。


今回スコーンを焼いたのは、今年の夏作ったグースベリーのジャムを開けたからです。
私はグースベリー・ジャムといったらスコーン、というくらい、この組み合わせが気に入っています^^
グースベリーを合わせると、クロテッド・クリームの濃厚なミルク風味が重くならず、さっぱりと食べられるのです。
イチゴジャムもおいしいけれど、グースベリーのジャムもスコーンと組み合わせる定番にしたいくらいおいしいと思います。


今回は4.5cmほどの抜き型を使用しました。
ホテルのアフタヌーン・ティー並みの大きさです... が、ホテル仕様なのは大きさだけです。
ブラウンズ・ホテルのヘッド・パティシエを務める、友人のファビアンによれば、「スコーンは、底に色目をつけないように焼き上げること。焼き過ぎないことがおいしいスコーンの秘訣」だそうです。

実際ファビアンの作るスコーンは、口の中でとけるような食感で、とっても美味しいのですが...
私のスコーンは、... しっかり焼きます(そして、底までキツネ色 ←)。
外側さっくり、というのが好きなのですね。
家でのお菓子作りは、こういうところが楽しいなーと思います。
やりたい放題(!)で、いろいろと実験したり、試行錯誤を重ねたり。
今回のスコーンは、型抜きもしましたが、邪道にも三角に切ったものもあります。
このほうが、生地に無駄が出ないからです。

... そして、某Bホテルのヘッド・パティシエ氏も、家でスコーンを焼くときには三角に切ることを、私は知っています..
