Marmalade Pudding/ マーマレードのプディング

I need to consume more marmalade.  I still have about seven jars of home-made marmalade (and three jars of plum jam too).

So, Project Marmalade No. 2.
I came across this recipe while I was browsing the web: Lord Randall's Pudding.  As it asked for 150g of marmalade, I decided to give it a go.

After one hour and 40 minutes of steaming, what I got was this.  Thank god puddings are served upside down.


I had marmalade and whole dried apricots (the two key ingredients for this pudding) on the bottom of pudding basin, so was hoping to see a nice glossy sunshine-colour on the top when I turn out the pudding.


...Well, the bottom didn't look much prettier than the bottom, I'm afraid.  But, let's face it, puddings are never eaten for their aesthetic qualities, but for their taste (I believe).

I served it with some home-made custard.  It was very moist, and quite sweet.  My recommendation would be to reduce the sugar by at least 30g.
Apricots added nice texture and a fruity flavour, and so did my chunky marmalade.  I am more a fan of thin-cut marmalade when eating it with toast, but for this pudding a thick-cut one would be more suitable.


Thanks to Wikipedia, I learned that "Lord Randall" is the title of a ballad.
However, the reason why this pudding was named after him still remains a mystery...

我が家のキッチンにはまだ約7個もマーマレードの瓶が並んでいます(そして、戸棚の奥にはプラムのジャムも3個…)。何とかして消費せねばなりません。

ということで、マーマレード・プロジェクト第二弾です。
ウェブで、「ランドール爵のプディング (Lord Randall's Pudding)」というプディングのレシピを見つけました。これを一つ作れば、150g ものマーマレードが消費出来ます。これはいい ♪

イギリスのプディングと呼ばれるデザートは、オーブンで焼くものと、鍋で蒸すものとがあります。こちらは後者。お鍋から取り出して、ホイルのカバーを外したら…



哀れ、クレーター状態(涙)。こっちがてっぺんでなくて良かった。
プディング型をひっくり返して、中身を出しました。型の底にはマーマレードとアプリコットを敷いてあるので、つやつやとしたオレンジ色に輝くプディングとなることを期待していたのですが…

…やっぱり、あんまり器量よしじゃない。
まあ、イギリスのプディングって、見かけで勝負するものじゃないですけれど。

もろもろと崩れるプディングを、切るというよりは大きなスプーンですくって、カスタードソースとともにサーブします。
甘い。
そして、どっちり(どっしり+むっちり)とした食感。
砂糖は、30gは減らしてよいと思いました。



でも、アプリコットの食感とマーマレードのオレンジの香りはなかなかでした。
おいしいことはおいしいのだけど…でも…甘かった。


ウィキペディアのおかげで、Lord Randall というのは詩のタイトルであることが分かりました。
が、なぜこのプディングにその名前がつけられたのかということは、依然、謎のままです…。

Marmalade sablée/ マーマレードサブレ


I have been quite crazy about marmalade making lately, as now is the season for Seville oranges.  Before I realised, my kitchen was full of marmalade jars...
In order to consume part of the stock (while also eating with toast and with yoghurt), I decided to bake some marmalade sablée.

Here's the recipe.

Ingredients(makes about 25):
Unsalted butter, room temperature  100g
Grated rind of one orange (organic or non-waxed)
Sugar  30g
Marmalade  30g  (chop the orange peel if too chunky)
Egg yolk  1
Soft flour 180g
Baking Powder  1/4 teaspoon
Salt  a pinch

1.  Cream the butter using a whisk, and add grated orange rind and sugar in three inclusions.  Mix well.
2.  When the butter is light and fluffy, add the marmalade and mix well.  Follow with the egg yolk.
3.  Mix the dry ingredients and sieve them together.  Using a wooden or rubber spatula, fold in the dry mixture to the butter in three inclusions.  Don't over mix.  Scrape the side, so that you have all the flour mixed into the dough.
4.  Now using your hand, bring it together to form a ball that is even in consistency.  Form two cylinders or square bars, wrap in a cling film and rest in fridge for 1 hour (alternatively you can keep this in a freezer to bake at your convenience).
5.  Heat the oven to 170c.  Take out the dough, and roll it in granulated sugar to coat the side.  Cut the dough in 4mm slices, and arrange them on a baking tray.

6.  Bake in the oven for 8 minutes, take the tray out, turn and put it back in the oven (to bake evenly).  Bake for a further 8 minutes or until slightly golden brown around the edge.
7.  Take the sablées out and cool them on a wire rack.  Keep them in an air-tight container, and eat within 5 days.

You may think they lack a bit of sweetness, but I like it this way.  I don't want to have a cookie that I feel, "Oh, one is enough!", but rather want to feel "Hmmm, I want some more".

Along with rhubarb recipes, I am looking for more ways to consume marmalade.. (as this recipe uses only two tablespoonfuls!)

このところしばらく、マーマレード作りに熱中していました。ほんの数週間しか出回らない、セヴィル(セヴィリア)・オレンジが旬だからです。
そして、気づいたらキッチンはマーマレードのビンで一杯…。
というわけで、マーマレード消費のために何か作ろうと思い、マーマレードを使ったサブレを焼きました。

作り方です。

材料(約25枚分): 
無塩バター(室温で)100g
オレンジ1個分の皮のすりおろし(できれば無農薬)
グラニュー糖  30g
マーマレード(皮が大き目・長めのものは刻む) 30g
卵黄 1個分
薄力粉  180g
ベーキングパウダー 小さじ1/4
塩 一つまみ

1.バターを泡立て器で軽く混ぜ、オレンジの皮、砂糖を3回に分けて加え、その都度よく混ぜる。
2.バターが軽く、白っぽくなったら、マーマレードを加えて混ぜる。同様に卵黄も加えて混ぜる。
3.粉類を一緒にしてふるい、泡立て器から木べら、または固めのゴムべらに持ち替えて、粉類を三回に分けて加え、切るように混ぜる。混ぜ過ぎないように注意。
4.手で生地をひとまとめにする。粉っぽい部分がなく、全体が滑らかなようであれば出来上がり。生地を二つに分け、四角または丸い棒状にまとめる。ラップをして、冷蔵庫で最低1時間寝かせる(この状態で、冷凍庫で保存も可能)。の
5.オーブンを170度に温める。生地を取り出し、グラニュー糖を押しつけるようにしてまぶす。4mm ほどの厚さにスライスして、トレイに並べる。

6. オーブンで8分焼いたら一度取り出し、トレイの向きを変えて(均一に焼きあげるため)再度8分焼く。ふちが薄めのキツネ色になったら焼き上がり。
7.  サブレを取り出し、網などの上で冷ます。密閉容器などに入れて保存のこと。5日以内に食べきったほうがいい。


甘みは控え目ですが、足りないとは思いません。
一枚食べたらもういい、というよりは、もう一枚…とつい手が出てしまうくらいの甘さです^^


それにしても…もっとマーマレードを消費せねば。
ルバーブレシピも求めているところですが、マーマレードレシピも何かないものでしょうか?

Rhubarb cheesecake/ ルバーブのチーズケーキ

So, new ideas for rhubarb:


Rhubarb cheesecake.

Well, it's just a baked cheesecake topped with stewed rhubarb, so not that new...  I'll try to be a bit more creative next time.

Anyway, it tasted good.  I think rich cheesecake + tangy and  refreshing rhubarb is a winning combination.
(and a great way to cover up the slightly dark-coloured top!)




So... what should my next "creative" rhubarb dessert be..??

ルバーブを使ったお菓子、ということで...


ルバーブのチーズケーキ。

ベイクドタイプのチーズケーキに、ルバーブのコンポートをのせただけなので、ひねってませんが...。

リッチなチーズケーキに、爽やかな酸味のルバーブというのは、相性の良い組み合わせです(そして、ちょっと焦げてしまった表面を覆うのにも最適  笑)。甘すぎず、重くなりすぎなくて。






さて…次回のルバーブのお菓子は、何にしましょう…。

Beetroot chocolate cake/ 赤ビーツ入りのチョコレートケーキ

It may sound odd to Western people, but beetroot is one of the "newcomer vegetables" in my cooking repertoire.  Simply because we don't have them (commonly) in Japan.

I like its sweetness and the colour.
I even enjoy the stain on the chopping board, which looks slightly.. dangerous.


I have made salad, cooked pasta and soup using beetroot - and this time, a chocolate cake with beetroot.

First, I steamed the beetroot, and then then cut it in chunks.  Next, using a food processor, I made it into a purée.  It became a lump of scary pinkish red "stuff"- but well, you blend it in chocolate, and then it's invisible..

The result was, as my fellow pastry enthusiasts assured me, good.
It was very moist without being overly rich.  You could hardly taste the beetroot (nor could you see it).


In the past, I have baked a few just-so-slightly-over-baked gâteau chocolat.  It is quite tricky to get the timing right, but the addition of beetroot purée can prevent this from happening.
For that, it is a good recipe, though you need to add an extra 20-40 min. to prepare the beetroot.

Perhaps the biggest fun you can get out of this cake (apart from eating it) is serving it to a beetrootphobic friend and asking, "Can you guess what the secret ingredient is?"...

イギリスでは、Beetroot (ビーツ、テーブルビート)というカブの一種をよく食べます。
サラダバーなどでは食べたことがありましたが、お店で生のもの買って、自分で調理して食べるようになったのは、最近のことです。

味はトウモロコシみたいに甘くて、切ると中はものすごい赤紫色です。
きれいな色だと思うのですが、切ったあとの包丁とまな板は結構怖いことになります...


今までに、ピンクのサラダ、真っ赤なパスタや赤黒いスープなどを作ってきましたが、今回挑戦したのは、なんとチョコレートケーキです。

まずはビーツを蒸し、その後角切りにして、フードプロセッサーでピューレにします。
← こんな真っ赤。
これを、チョコレート生地に混ぜて焼きます。


出来上がりはこんな感じです。
ビーツが入るぶん、かなりしっとりとしています。
色も味も、ビーツが入っているのは全然分かりませんでした(びっくり)。


小麦粉少なめ(またはナシ)のチョコレートケーキは、焼き加減が難しいものです。
でも、ビーツを入れることで、焼きすぎ・生焼けのリスク無しに「しっとりチョコレートケーキ」が焼けるわけですね。
その点において、優れたレシピだと思います。ビーツの味もしませんし。
ただ、日本ではビーツは手に入りにくいですよね...

私としては、友人のビーツ嫌い&チョコ好きの女性に黙って食べさせて、「このケーキ、何入れたか分かる?」って訊いてみたい...。

Art in Kensington Gardens/ ケンジントン・ガーデンズのアート

I tend to think that the best things about London are the parks, museums and it being so international.
And, when you combine all these, you get this.


Art installation by Anish Kapoor, an Indian Sculptor, in Kensington Gardens.

I went to his exhibition at The Royal Academy in 2009, which was very interesting.  I saw the same sculpture back then, and enjoyed the artist's playfulness.
Placing it in the middle of the park has a very different effect, but I like it nonetheless.

It's like looking into a giant spoon.  You must have looked into a spoon, laughing at your deformed, upside-down face when you were a kid, for sure?












It looks like this when you see it from far away..  Just like a super-large picture or a photograph panel in the middle of the park.


Four of his sculptures have been on display in the garden since September, and the exhibition is lasting until March.  I think I will miss them when they are gone.  It's become part of the garden.

It was a fine day - we have been having so many grey and rainy days, that a day like this is so precious.  You never know when you will see a sky like this again..

ロンドンの良いところは?と訊かれると、大抵「公園と、美術館と、それとインターナショナルなところ」と答えます。
それらをぜーんぶ一緒にすると...

こうなります。


ケンジントン・ガーデンズ内で現在行われている、インド人の彫刻家アニッシュ・カプールの展示です。

1年ほど前にも、ロイヤル・アカデミーで行われたカプールの展覧会を見に行ったことがありました。そこにも同じ彫刻がありましたが、そのときにもみんなが近寄って覗きこんで、なんだか楽しい雰囲気でした。

公園でもなんだか面白い感じです。
凸面のほうはやや細長く映るだけですが、凹面の弧の内側に立つと、さかさまに映ります。みんな、写真を撮ったり、あとずさってみたり。
小さい頃にスプーンを覗きこんだときのことが思い出されます(私だけじゃないはず...)。








遠目に見ると、こんな感じです。
公園の真ん中に突如現れた、巨大な写真か絵のように見えました。


公園内には、全部で4つの彫刻が展示されています。
期間限定のものなので、3月までだそうです。見慣れてしまったので、なくなったら寂しくなりそうです。

この日は珍しい晴天で、散歩日和でしたが...こんな青空、次は一体いつ見られるのやら。
毎年のことながら、ロンドンの冬は暗いです...

Rhubarb is back! / ルバーブの季節ふたたび

So, it's January.
January is always funny - it seems to just fly by.. and indeed already half of the month is gone.
But it is not all bad news, because it's rhubarb season again.

These come from Holland, so not the forced rhubarb from Yorkshire yet.
But anyway - I had to have them.

I made a small batch of jam, and used the rest to make some crumble.
I have read many times that rhubarb and orange marry well, but I have never tried it before.  So, here is my first trial.

I always toss the rhubarb in sugar before cooking - this way I can extract the water, and prevent the crumble from getting too watery.
You can make jelly from this "rhubarb water", or reduce it to make a syrup to go with the crumble (or yoghurt).
This time I added grated orange zest as well, which brought an extra refreshing aroma.


The verdict- I do agree with the general public that the combination of rhubarb + orange works very well.

And, I think it's about time that I try something different from just rhubarb jam and rhubarb crumble, though I love them so much.
Any ideas??

あっという間に年も明け、1月もすでに半ば過ぎ...

毎年のことですが、1月ってあっという間に終わってしまう感じです。
でも、時がめぐったおかげで...またルバーブの季節です。

← こちらはオランダからの輸入品で、まだヨークシャーの暗闇栽培のものではありません。
が、見つけたら買わずにはいられませんでした。

とりあえず色の綺麗なところを使って、ジャムを作ります。
そして、残りでクランブル。
今回はオレンジと合わせてみました。イギリスではよくある組み合わせです。

最初に、刻んだルバーブと砂糖を合わせてしばらく置き、余分な水分を出してしまいます。今回はここにオレンジの皮のすりおろしを加えました。
そして、水気を切ったルバーブに、オレンジの果肉を混ぜて焼きます。
因みに、この「ルバーブ水(?)」は、ゼリーにしたり、煮詰めてシロップにします。


たしかに、オレンジ+ルバーブのクランブル、なかなかです!ルバーブの酸味にオレンジの香りが良く合います。

そして...そろそろルバーブでジャムとクランブル以外のものも作るべきではなかろうかと思うのですが...

どうしようかな。

Genoa Part 2/ ジェノヴァへ Part 2

We were luckier with weather this day- clear blue sky, though still very cold.
My husband and I set off for a walk in the Old Town, which is apparently the largest in Europe.
We came across this church by complete chance - San Siro.

From the outside, it looked rather plain.  However, inside was quite insane..
I don't know if "overdecorative" is the right word (well, obviously spell-check doesn't think so) here, but that was my impression.   


Anyway, we learned that this church was not an exception, as we went to another that looked quite similar, 
i.e. you almost cannot find a plain wall inside the church, that isn't gilded, or painted.


After a bit more sightseeing in the afternoon, we spotted a gelateria that was open.  I couldn't miss this opportunity.
I chose Fior di latte and caffe.  I liked the coffee gelato being light yet strong- not overly creamy, and very aromatic with strong coffee.  Divine.
I didn't regret a bit that it was 4c outside.


So, having had another item ticked off from my "to eat" list, but eager to tick of another, we headed towards the port to look for... farinata.  Farinata is a chickpea based pancake, which is a speciality of Genoa.

By the port, we saw this most amazing sunset.
However, sadly, the farinata place we were looking for was closed.


We had to walk back to the Old Town, and did manage to find one farinateria.  
So, here it is - our first ever farinata.  It had a surprisingly rich and complex flavour, that made us want to have a sip of crisp dry white wine.  We enjoyed it very much, even though we knew we were also having dinner in about two hours.





And then, off to dinner...
It was a nice Italian restaurant with a bit of French touch.  I was again lucky to have chosen an excellent dish, which was lobster spaghetti.
However, still being quite full from gelato and farinata, I had to have aid from my husband to finish the plate.


All in all, it was a nice trip - but we did not have enough time nor sun.
I do hope to come back another time, in another season!

ジェノヴァ二日目です。
この日は、前日よりはずっと天気が良く、青空が見られました。相変わらず、気温はとても低かったのですが。
午前中は義理両親とは別行動にして、夫と二人で旧市街を歩きました。ジェノヴァの旧市街は、ヨーロッパでは最大なのだとか。
いくつか教会を覗いたのですが、そのうちのサン・シロという教会は、たまたま通りかかったので入ってみたのですが...

まあ、華美というか、豪華絢爛というか。
侘び・寂びの日本人からすると、過剰装飾もここまで行くか、という感じでした。


しかし、このあとで行ったいくつかの教会でも、似たような装飾が見られた(要するに、無地の壁が存在しない)ので、特別とか例外ということではないようでした。
ジェノヴァって、商業で栄えたリッチな街だったのでしたね。


午後にももう少し観光を続けました。
そして、念願のジェラテリア発見です!!
シーズンオフで、開いていないジェラテリアも多いので、見逃すわけには行きません。
フィオーレ・ディ・ラッテ(ミルク味ですね)とコーヒーを注文しました。
コーヒーが特に美味しかった^^
さっぱりとしながらしっかりと濃厚なコーヒーの苦みがきいていて、あっさりと食べてしまいました。


「ジェノヴァで食べたいものその2」を達成した私たちが次に向かったのは、旧港方面です。海辺に面した道に、ファリナータのお店があると聞いていたからです。
ファリナータというのは、ひよこ豆の粉で作ったクレープのようなもので、ニースにもソッカという似たものがあるそうです。

海辺に出たら、ちょうど夕焼けで空がきれいでした。
目当ての店は閉まっていましたが...


仕方なく、旧市街に引き返し、見つけたお店でとりあえずファリナータを購入。
← こんな感じのものでした。

思ったよりもずっとリッチな味で、オリーブオイルたっぷり。
外側はカリッとして、チーズが入っているかと思うような、濃厚な味わいです。
思わず、よく冷えた白ワインが欲しくなりました。

2時間後には夕食だね...と言いながら、平らげました。



そして、夕食。
ちょっとフレンチの要素のあるイタリアン、というお店でした。
こちらでは、ロブスターの手打ちパスタを頂きました。
とてもおいしかったのですが、やはり先ほどのファリナータがこたえてしまい、夫にだいぶ助けてもらって、やっとお皿を空にしたのでした。


そして、翌朝はもう出発です。

なかなか良い旅ではあったのですが、1日半では、やはり時間が足りませんでした。
まだまだ見たいものや、食べたいもの(笑)があったのですが...
今度はもっと良い季節に、もう一度行きたいと思います。
