Pumpkin pie/ パンプキンパイ

I often go to the farmers' market on a Saturday morning, mainly to buy vegetables and eggs.  Last Saturday, I was particularly excited to find a very nice pumpkin at my regular vegetable stall.  I love pumpkins.

And, I decided to make a pumpkin pie.


One big mistake I made was that I used a French tarte dish, which was a bit too shallow for this recipe.  I made pâte brisée, and layered with crushed pecan nuts, and then poured the pumpkin mixture.  The result was not bad, and I liked the flavour of pecans with pumpkin, but still, I wish I had a thicker layer of pumpkin.

The good thing about pumpkin pie is that it tricks you into thinking you are eating some healthy (well, it's made with vegetables..).
So, we indulged ourselves with a generous dollop of crème fraîche on the side.

Now I wonder - especially after seeing quince go so quickly - will the pumpkin season last long enough to attempt another pumpkin pie (in a deeper pie dish), pumpkin crème brulée and pumpkin muffins as well as pumpkin soup and pumpkin salad?
We shall see...

土曜日の朝になると、近所でファーマーズ・マーケットが開かれます。
野菜と卵は、大抵この市場で買うのですが、先週の土曜日、いつも行く野菜の屋台で、おいしそうなかぼちゃを見つけました。日本のかぼちゃに似た感じのものです。
早速購入し、パンプキンパイを焼くことにしました。
こんな出来上がりです。


基本的なところで、一つ失敗をやらかしました...
それは、フランスの浅めのタルト皿を使用してしまったことです。パート・ブリゼという甘みの無い生地に、ピーカンナッツを細かく砕いたものを散らし、そこにかぼちゃのクリームを流して焼いたのですが、かぼちゃの分の厚みが足りません。
やや、かぼちゃの甘みが少ないパイになってしまいました。

とはいえ、まるっきり失敗だったわけではありませんが...
ピーカンナッツの香りとかぼちゃの相性はとても良いですし、甘み控え目のぶん、「体にいいオヤツ」を食べている気分になれます。
ちなみに、アメリカではサンクス・ギビング(感謝祭)に、よくこのパンプキンパイを焼くそうです。その折にはホイップクリームや、バニラアイスクリームを添えるのがの定番だとか。私たちはクレーム・フレッシュ(サワークリーム)を添えて食べました。

このおいしいかぼちゃ、一体いつ頃まで出回っているのでしょう。
まだ、かぼちゃのクレーム・ブリュレも作りたいし、マフィンに焼きこむのもやってみたいし、パイに再挑戦したい気もするし、もちろんスープにもしたいし...

...カリンを逃してしまっただけに、旬には過敏になっているかもしれません。
来週もマーケットでかぼちゃ、買います!

Quince Jam/ カリンのジャム

Well....
I am looking back about a month ago and writing this post.  Anyway, here we go.

I found some quince in the nearby supermarket.  It was the first time I saw the real, fresh fruit, though I have eaten confectionery and desserts made with quince before.  In Japan, quince is called karin, and is known for its medicinal quality for sore throat.  It is not unusual to find some cough drops that say "with karin extract".

Without really knowing what to do with it, I bought two fruits and went back home.


I didn't know that quince had such a strong smell- I'd say it's like a blend of lemon, peach, apple and honey.  I loved it at the beginning, but after a while, it almost felt too strong..  According to the book I have, it works well as an air freshener.

After going through several recipes and spending time, I finally decided to make a quince jam, simply because this seemed to be the easiest thing to make - well, this was the first attempt to do anything with quince for me, so I played safe.

I read that quince changes colour as you cook.  So, excitedly I took a "before" picture.


And, this is "after"...


Yes, it did change colour, but I think I was expecting something a bit more dramatic- my colleague (now ex-colleague) told me that it would become red, but my quince only turned dull orange.  A bit disappointing.

Maybe if I cooked it long enough, it would turn into what Brits call "quince cheese",  basically pâte de fruit that you serve with cheese.  However, I stopped before that stage- as I think I prefer tasting my quince with a piece of toast, rather than Manchego.  It went down quite well with yoghurt too.

Sadly, before could attempt any other recipes, quince disappeared from the shops...

まただいぶ時間が空いてしまいました...
ま、いいや、と。

近所のスーパーで、珍しいものを見つけました。カリンです(英語でQuince、クインス)。
調理したものは食べたことがあったし、写真も見たことがあったけれど、実物を見るのは初めてでした。
旬は短いと聞いていたんので、何に使うとも決めないまま、2個ほど買って帰りました。


買って驚いたのは、その香りです。レモンとモモとリンゴと蜂蜜を足して4で割って、強烈にしたらこうなるんじゃないでしょうか。
最初のうちはいい香り~と言っていたのですが、次第に甘ったるくなってきました。芳香剤になる、と本にあったのも納得です。

何を作ろうか、いろいろと考えたのですが、結局は無難にジャムを作ることにしました。
「カリンは調理中に色が変わる」と読んだので、ビフォー&アフター写真を撮ってみました。こちらが調理前。


そして、こちらが調理後...


たしかに色は変わったけれど、私はもうちょっと劇的な変化を期待していたので(笑)、ちょっとがっかり。リンゴが変色したみたいです...
真っ赤になるって(元)同僚は言ってたのですけど。

イギリスやスペインでは、よくハードチーズと一緒に「クインスチーズ」というものが出てきます。このカリンを煮て、ペクチンの作用で固めたもので、フランスのお菓子pâte de fruit (パット・ド・フリュイ)みたいな感じです。
このジャムも、もう少し煮詰めたら固めになったのかもしれませんが、目的はジャムだったので、ややゆるめで止めました。
トーストのほか、ヨーグルトとも相性◎です。

次は何を作ってろうかなぁ...と思っていたのですが、あっという間にカリンの季節は終わってしまいました。
残念。

Plum Tart/ プラムタルト

Today, I baked a plum tart.



I can never put a knife into a plum without remembering the days at Claridge's, where I did my internship.
I had to slice plums very very thinly every day for the fruit tartelettes, and then on Tuesdays, I had to cut about 30 of them for the plum tartelettes.  
My plum tart is basically the larger version of Claridge's.


I like its simplicity (pate sucree + almond cream + plums + streusel), and love the flavour of this combination.

Though it looks "clean" at a first sight, when you dig your fork into the tart... the purple-red juice bursts out, stains the fork and overflows onto the plate...


I quite enjoy this horror look ;)
My recommendation would be to serve this with a dollop of creme fraiche, along with a nice cup of tea.

I guess this is the last time I am baking something with plums this year.  I made so many plum jams, and I think this is a nice finale to mark the end of the plum season.

今日はプラムのタルトを焼きました。
夜焼いて、...朝写真を撮ると、こうなります...



これは丸い、黒ずんだ赤のプラムを使っているのですが、このタイプのプラムを手にすると必ず思い出すのが、クラリッジスホテルでインターンをやっていたときのことです。
毎朝、フルーツタルト用にうすーいイチョウ切りにしていました。
そして火曜日には、プラムタルトの準備も。
今回作ったプラムケタルトも、ホテルで作っていたものの大きめバージョンのような感じです。


サブレ状のタルト生地にアーモンドクリーム、プラム、上にシュトロイゼル、というシンプルなもの。
ネクタリンでもたしか、同じようにして作った記事を書いてます。
このシンプルさが好きです。

焼きあがりは、ちょっとプラムが乾いた感じなのですが、フォークを入れると...中から皮の赤味が移った果汁があふれ出てきます。
いきなりお皿に赤黒い果汁が広がる、ちょっとホラーな感じがまた楽しい  ^^
紅茶と、クレーム・フレッシュ(フランスのサワークリーム)と一緒に食べるのが、私のおすすめです。


たぶん、今年プラムのお菓子を作るのは、これが最後でしょう。
今年はよくプラムのジャムを作りました...タルトで打ち止め。
また来年!

Columbia Road Flower Market

I know..  I've delayed uploading this for a month now.  Well, anyway, here we go.
We went to Columbia Road Flower Market on a Sunday.  I realised very quickly that we made a late start..


It was really busy, packed with people.  We struggled to stay together and to move at the pace we wanted to.  However, it was fun seeing people happily carrying huge bouquets of flowers, or pots of trees.


There were so many to choose from - from hydrangeas, which we seldom find at flower shops in Japan, to olive trees, to red hot chilli peppers!














I was particularly happy to find what they called "Chinese Lanterns".  It is called hohzuki in Japanese, and we love them so much that we even have a market market that only sells hohzukis, in Senso-ji (Senso Temple), in Tokyo.
However, our market is held every year on the 9th & 10th July, so I wonder when the right season is..??


We brought back some lisianthus and two pots of herbs - rosemary and basil.  The latter two are still healthy, adding some flavour to our everyday dishes :)

これを書いているのは日記の内容からひと月後...だいぶ前のことですが...

この日、コロンビア・ロードというところで毎週開催される花市場に行ってきました。
行ったときにはすでにこの混雑ぶり。もっと早い時間に行けばよかった。


身動きすらしづらいほどの混みようで、自分のペースで歩くこともできません。
でも、大きな花束を抱えた人や、鉢植えをかついで歩く人々を見るのも面白いものです。

ひまわりばかり売っているお店もあれば、

日本では珍しいアジサイの切り花をうるお店もあるし、

トウガラシからオリーブの木まで、ほんとにいろいろとありました。
(トウガラシにはレッド・ホット・チリペッパー 火山よりもホット!と書いてありました...)

見かけてなんだか嬉しくなったのは、ほおずきでした。
こちらでの名称は(一般的か不明ですが)、Chinese Lanterns 、中国の提灯。
東京のほおずき市は7月なのに、これをみかけたのは10月の市場です。はたして、ほおずきの「本当の」季節っていつなんでしょう??
私は初秋という印象があったのですが、はて。


何も買わないのもナンなので、トルコキキョウと、ローズマリーとバジルの小さな鉢植えを買って帰りました。
ローズマリーとバジルは今も元気で、食卓に香りを添えてくれています  ^^
(が、いつまで生き延びてくれることやら...)

Remains of summer in a jar / 夏の名残りのジャム

I have been making quite a few jars of jam...


From the far left, gooseberry, nectarine, golden plum, damson, greengage and English plum.
I wish I could say this means I don't have to go to the supermarket to buy any jams - however, that is not the case (we normally buy strawberry jam, which I didn't get around to make much of).

This was my first attempt to cook damson jam.
In my book, it said that the fruit is very tart but develops a spicy flavour as you cook.  I am not sure about the flavour, but well, I do like its deep red colour.










I am quite fond of my golden plum jam, which I already wrote about in an earlier post.  It is quite interesting to see how similar the greengage jam looks- the fresh (uncooked) fruits looked quite different from each other (basically, green and bright yellow).



Jam making is always fun, as it really makes you feel like you are capturing the season in a jar.
Also in my case, I can say I'm not doing patisserie - but instead, I'm preparing something for our breakfast  (makes me feel I am doing something slightly healthier)!
Not sure how long they would last, but surely these bright coloured, flavoursome jams will give us some pleasure on cold and dark winter mornings.

今年は夏から秋にかけて、よくジャムを作りました。



左端から、グースベリー、ネクタリン、黄色のプラム、ダムソン(小粒のプラムの一種)、グリーンゲージ(緑のプラム)、イングリッシュプラム、です。
これでもう、お店で買わなくて済む...といいのですけど、お店でも買います(特にイチゴジャム。今年はほとんど作りませんでしたので)。

作ったのは初めてです。ダムソンは出回る時期が非常に短く、見つけたらすぐに買わないと、旬を逃してしまいます。
本には「生だととても酸味が強いけれど、煮るとスパイシーな風味になる」とあったのですが...味見しても「?」でした。
ま、色がキレイなので、いいとしましょう。






以前こちらのブログでも書きましたが、黄色のプラムのジャムはなかなか良い出来でした。
面白いのは、火を通すと果物の色が変わってしまうこと。
生だと真っ黄色のプラムと、くすんだ緑色のグリーンゲージなのですが、ジャムにするとほとんど見分けがつかないくらいになってしまいます。


ジャム作りが楽しいのは、旬の味をそのままビンに詰められたような気になれるからでしょうか。
それと、私の場合お菓子じゃなくて朝ゴハンの支度だという言い訳ができる、ということもあります(べつに言い訳しなくていいんですが...)。大義名分というか。

6ビンもあるジャムですが、いつまでもつことでしょう。
いずれにせよ、晩秋や冬の暗い季節に、夏や初秋の果物を再び味わうことができるのは、ちょっと贅沢な楽しみです。

Trip to Mont St=Michel and St Malo part 2/ モン・サン‐ミシェルとサン・マロの旅 Part 2

After saying Good-bye to Mont St-Michel, we crossed over to the nearest town to stop for lunch, and had a  galette complète.  Galette is a crêpe made with buckwheat flour, and Complète is a galette that comes with ham, cheese and a soft sunny-side up egg.
I was too hungry, and the galette was sooo good.

I only realised that I forgot to take a picture after I had cleaned the plate...
After this satisfying lunch, we walked over to the boulangerie next door, and asked for kouign-amann.  

This regional speciality (weirdly) became massively popular in Japan, back in the 90's.  Seems there are many variations (large, small, folded, layered, rolled..), but here is the one we bought.


I think this was one of the best patisseries I have ever tasted!!
It's like the best-ever palmier + top croissant divided by two.
You get the crunch and sweetness of the caramelised sugar, the flakiness of the puff pastry, and buttery soft layers of a viennoiserie.
The lovely lady at the shop warmed it up just slightly, and I am sure that brought out the flavour too.

We also bought a slice of far breton, which is another regional speciality.  They say this might be the oldest form of a flan, and is made with egg, milk and sugar, with soft, melting prunes.  This was good too.  I think we were extremely lucky to have found this patisserie.








After a wonderful lunch & dessert, we carried on our journey and arrived at St Malo, a charming seaside town.


I am so not a beach person, but I do love the coast.  The sky was blue, and the breeze felt so goooood...


We dined at Delaunay that night, which was a big disappointment.
My main course, ravioli of lobster came with NO SEASONING.
When it was sent back to the kitchen, and returned on our table - it was THE same ravioli.  By then, the pasta was almost dissolved in the now over-salty cream.
I normally avoid writing negative comment on this blog, so you can imagine how bad the experience was.

I think we simply used up all our luck for the good weather and the fantastic Kouign Amann.

Next morning, we had a short stroll by the seaside, and then picked up our breakfast - what else, but a few more kouign amann?


Unfortunately, these were not as good as the previous day's.

We had to leave St Malo before noon, as the journey back to Paris was quite long.  We made two hasty stops on our way back, and got back to Paris just in time.  Our 30min dinner (!!  bravo for the quick service) was taken in quite a rush, and then we jumped on our Eurostar back to London.  We slept all through the journey..

Overall, it was a great trip - and I am dreaming of doing it all over again!!!

モン・サン-ミシェルをあとにした私たちは、とりあえず一番近くの町ででお昼にすることにしました。
入ったのはクレープ屋さんです。定番である、ガレット・コンプレットを頼むことにしました。
ガレットというのは、そば粉のクレープで、フランスでは甘くない「ゴハン」クレープは、大抵このそば粉のものです。コンプレットは、ハム、チーズと半熟目玉焼きがのったもの。

とーってもおいしくて、お腹が空いてて、...きれいに平らげたあとで、写真を撮り忘れたことに気づきました...惜しいことをした。
お昼を食べ終わってから、隣のパン屋さんに行きました。

皆さん、90年代に日本で大ブームを巻き起こした、「クイニー・アマン」というお菓子をご記憶でしょうか?(実際にはクィニャマンに近い発音ですが)
クイニー・アマンは、ブルターニュの地方銘菓で、今回の旅の目的の一つでした。

現地では、いろんな大きさや形のものがあるようでしたが、私たちが、今回立ち寄ったところで買ったのはこんなの↑ 手のひらサイズでした。

おいしーい!!!


今までに食べたお菓子の中で、かなり上位のランキングです。
おいしいパルミエと、おいしいクロワッサンを足して二で割ったみたい。
カリカリキャラメル+さっくりの皮、しっとりとした層にバターの香り。最高でした。体重と肌荒れを気にしないでいいのなら、毎日食べたい。ものすごく私好みです。
シンプルだからこそ、飽きがこない味です。
お店で、「今食べるの?じゃ、ちょっとあっためるわね」と、素敵なマダムがちょっとだけ「チン」してくれたのですが、これがまた良かった気がします。


こちらのお店でもう一つ買ったのが、ファー・ブルトンというお菓子です。
フランの原型とも言われており、牛乳と卵をたっぷり使った、優しい味のお菓子です。プルーンを使うのが特徴。
こちらもおいしかった。
こんなおいしいお菓子屋さんを発見出来て、本当にラッキーでした^^





満腹&満足のお昼とおやつのあと、サン・マロに向かいました。
サン・マロは、海辺にある、城壁で囲まれた小さな町です。


ビーチリゾート、というようなものには惹かれないのですが、海辺に行くのは大好きです。
空が広くて、風がとても気持ち良かった!ほんとに、天気には恵まれていたと思います。


その晩の夕食は、Delaunay というレストランでした。
私のメインはロブスターのラヴィオリだったのですが、なんと、塩味がしない...
キッチンに戻してもらったのですが、同じラヴィオリが、今度はおそろしく塩辛いソースに浸って戻ってきました。
もうラヴィオリどろどろ、ロブスターも火が通りすぎて固い。これはひどすぎますよね。
通常、このブログでは悪い批評というのは避けているのですが、これは書かずにいられない、という気になりました。皆さん、行かないように!

今回の旅行ではきっと、天気とクイニー・アマンで、幸運を使い果たしてしまったのでしょう...。

翌朝は、散歩のあとで朝食をとりました。
当然(!) クイニー・アマンです ^^


うーん...昨日のクイニー・アマンのほうが、断然おいしかったなぁ...

パリに向かう道のりはかなり長かったので、昼前にはサン・マロを発ちました。後ろ髪を引かれる思いでしたが...。
途中お昼などで寄り道をしつつパリに到着したのは、レンタカーを返す予定時間ぎりぎり。
その後、大急ぎで駅近くのブラッセリーにて30分で夕飯をかきこみ(スピーディーに対応してくれたウェイターさん達に感謝!)、ユーロスターに乗って、ロンドンに戻りました。

帰りの列車ではさすがに疲れて、二人ともずーっと眠ってしまいました。
でも、ほんとに充実した、楽しい週末旅行でした。
また行きたい!!

Trip to Mont St=Michel and St Malo part 1/ モン・サン‐ミシェルとサン・マロの旅 Part 1

Oh god.. by the time I am updating this, it is already several weeks ago that we took a long-weekend trip to Mont St-Michel and St Malo.

We took the Eurostar to Paris, then rented a car and drove up to Mt St-Mich, via Rouen.


Rouen is a charming town in the Normandy region, famous for its Cathedral.  It is the one that Monet painted at various time of the day.  After a hasty baguette-sandwich lunch, we made a quick tour of the cathedral.



Then, we headed for Mt St-Mich...

I went to Mt St-Mich once, way back in 2001, and totally fell in love with the place.
I always wanted to go back, and here I was finally back, after nine years.  I was already excited to see the characteristic silhouette far ahead!


When we arrived, we just walked around the Island (if I may call it so) until dark, then had a light dinner with a glass of cidre (although they have had a dispute for centuries, Mt St Mich is in Normandie - the apple region, and not Bretagne), and walked back to our hotel, which we booked months ago, so that we could lodge inside the walls.


We were very lucky with the weather.
Next morning was a bit chilly but crisp and clear.  The Abbey under a bright blue sky - it couldn't be better.


Inside the abbey was very busy with many tourists from all over the world.  I wish we could come during the weekdays..
The structure of the abbey is amazing, and you will understand why it is called "Merveille", when you see what  technique and knowledge and skills were applied to build this magnificent building.
My favourite part was the cloister- I love Romanesque cloisters.






In the early afternoon, we left Mt St-Mich.
This time, just like last time, I was thinking - When will I come back here next time?
What happens twice, happens thrice...

これを書いている時点では、すでに数週間前のことになってしまいましたが…9月の半ばの週末、モン・サン‐ミシェルとサン・マロに行ってきました。

まずは、ロンドンからユーロスターに乗り、パリに到着。そこからレンタカーして、ルーアンという街を経由してモンサンに向かいました。


上の写真がルーアンの街並みです。私は過去に2度ほど来ているのですが、なんだか居心地の良い街です。
ここには、モネが何点も異なる時間に描いたことで有名なルーアン大聖堂があります。お昼のあと、行ってきました。



そして、一路モンサンをめざします。

モン・サン‐ミシェルには、2001年に一度姉と行ったことがあるのですが、そのときにとっても気に入って、ずっとまた行きたい、と願い続けてきたのでした。
9年ぶりにようやく来られることになり、遠くあの特徴的なシルエットが見えただけで、もう興奮状態でした。
(ちなみにこの土地の羊はソルト・マーシュ・ラムと呼ばれ、塩を含む草を食んで育つため、塩を加えなくても肉に塩味があることで知られています)


宿は島内に取ってあったので、ひとまず荷物を下ろし、それから暗くなるまで、島中を歩き回りました。どこを切り取っても、絵になりそうな風景でした。
軽めの夕飯をシードルとともに摂ってから、宿に戻りました。
朝、6時過ぎに家を出てから、長い一日でした。


次の朝は快晴。
天気には非常に恵まれていたと思います。
青空に映えるモン・サン‐ミシェルは本当に素晴らしい眺めでした。
(搭の先端に雲がかかっていました!)


この修道院は、改築や増築を繰り返してきたのですが、各時代ごとに、さまざまな技術や知識を盛り込んで築き上げてきたものです。
それらを眺めるのはとても興味深く、昔の人たちの熟練の業は素晴らしかった...と感嘆するのみでした。






私はロマネスク様式のの廻廊が好きなので、ここの廻廊ではずいぶんたくさん写真を撮りました。




昼過ぎまでたっぷりと時間をかけて修道院内を見て、早めの午後にモンサンをあとにしました。
駐車場で未練たっぷりに修道院を振り返りながら、次に来るのはいつだろう...と、9年前と同じことを考えていました。
二度あることは三度ある、と言いますから。
いつかまたきっと。
